I have quite a yummy recipe to share with you today!
This recipe is brought to you by: My internet went down and to avoid freaking out over my lack of ability to send out an important article, I made cookies.
(Follow up: Then I ate way too many of the cookies, drove to Burger King and hopped on their internet from the parking lot to get my work done and publish this blog post.)
Cookies make any situation a little bit better.
And good news! These cookies are made with oats, whole wheat flour and canola oil which means they’re completely healthy… right? Sure.
Cocoa Oatmeal Cookies
Makes 10 – 12 cookies (depending on how much dough you eat)
Ingredients:
- 1/4 cup whole wheat flour
- 1/4 cup flour
- 1 teaspoon cocoa powder (may increase to 3 teaspoons if you desire a more chocolaty cookie)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 1/4 cup sugar
- 1 egg
- 3 tablespoons canola oil
- 1/2 teaspoon vanilla
- 1 cup old fashioned oats
Directions:
- Preheat oven to 350 degrees.
- Combine flours, cocoa powder, baking powder, baking soda and salt in a large bowl.
- In a smaller bowl, combine sugars and beat in one egg.
- Mix canola oil and vanilla into sugar mixture .
- Slowly beat sugar mixture into flour mixture. Your dough should be slightly runny.
- Gradually beat oats into mixture until a thicker dough forms.
- Use a tablespoon to portion out cookies onto a cookie sheet lined with parchment paper or sprayed with cooking spray.
- Bake for 8 – 10 minutes, until tops of cookies are slightly browned.
I was really impressed with how these cookies turned out since I was just playing around in the kitchen and didn’t have high hopes. I loved the light touch of cocoa flavor and the chewiness from the oats. These will definitely be made in this house again!

Oatmeal cookies are the best- these sound yum but I think I would add in some peanut butter chips 🙂

you could add chocolate chips for even more chocolatey goodness!

My friend and I went home and made these after our Zumba workout last night! Added a little more cocoa, some dark chocolate chips, dried cherries, and almonds. So good, thank you 🙂

Yummo! I make cookies with oats all the time. Sometimes I blend the oats for a different consistency – sometimes I leave them “whole”. Totally going to use your recipe this weekend!

Just made these, soooo good fresh from the oven! May have eaten a little dough along the way too…

sadly, these cookies didnt turn out for me. I may have used a little too much cocoa, but I didnt think the consistency would turn out like this. I noticed that the batter (before adding oats), was too thick, so I added a little more oil. It is overly crunchy/flaky on the outer rim of the cookie, and gummy/chewy in the inside. Also, they don’t really have a flavor at all 🙁 I hope other people have better luck with them

These cookies are amazing! The only change I made was instead of the cocoa powder (I was out), I used Chocolate PB2 (same measurment). Plus, they were only 3 WW pointsplus for a large cookie! My kids LOVED these! And with only 1/2 c sugar and the whole wheat flour and oats, I felt good about giving it to them. I will be making these again!

Thanks a lot for this wonderful recipe. I had to make these cookies two days in a row as the first batch got over too quick. They came out wonderful and my family devoured these in no time. The taste of coco with oatmeal is too good. What do you think of the idea of replacing half the oil with greek yogurt?
Thanks again!
