Here’s a glimpse into our day yesterday:
Breakfast + Morning
My morning began with coffee and blog work at the computer, as usual! I made myself a hot mug of coffee by blending coconut oil and collagen together and loved every creamy sip.
About an hour later I made myself breakfast which included leftover baked oatmeal from Sunday topped with cashew butter and a sprinkle of hemp seeds.
Chase was up for the day at 7 a.m., right after Ryan left for work. I headed upstairs to get him dressed and ready for swim lessons before it was time for him to dig into his morning muffin and sliced strawberries.
Quick tip for anyone else with kids in swim lessons who are also still in diapers: I put one of Chase’s disposable diapers on under his reusable swim diaper for the drive to the pool and then undo the diaper and slip it right out of his swim diaper. It makes getting ready for swimming once we get to the pool SO much easier!
We had a fun time swimming with my friends Carrie and Jess and their little ones and Chase was all about the kickboards. As always, it was a bit of a battle to get him out of the water and into dry clothes but once he was changed, I gave him a snack before he basically sprinted down the hall toward the gym’s childcare. Since Chase seemed energetic and ready for more playtime, I said goodbye and got in a sweaty leg workout before scooping him back up and heading home.
Leg Workout
Yesterday’s leg workout began with a warm up that included 15 minutes on the elliptical followed by some bodyweight squats. And then it was time to work!
Here’s a rundown of everything:
Phew!
Lunch + Afternoon
Chase and I made it home about an hour before his usual naptime, so I made him and early lunch that included a cashew butter and jelly sandwich (cashew butter is his latest love) with some carrots and milk. I ate an RXBar while I put his meal together because I cannot get enough of the chocolate coconut and chocolate chip flavors. They’re so good!
After Chase was done eating, he did a decent job of entertaining himself with his trains and cars (with occasional calls out for attention from Mama) and so I threw together a frittata to reheat for breakfast throughout the rest of the week and chopped veggies for dinner while he played.
Once Chase was napping away in his crib, I grabbed a quick shower before heading back downstairs to wrap up dinner prep.
I hadn’t made it to the grocery store since last week, so when it came time to figure out what we would have for dinner, I took a small inventory of our fridge and pantry staples and Googled “sausage and cabbage soup” and crossed my fingers. I quickly found this recipe from Everyday Maven that called for simple ingredients I had on hand and knew I had a winner!
While the soup simmered and Chase slept, I began typing up this blog post, responded to time-sensitive emails and hopped on a conference call. I ended up having a bowl of the soup for lunch along with some veggie chips while I worked!
Chase’s nap lasted right around two hours and once he was up, I turned off my computer and went back into mom mode!
Since it was raining all day yesterday, indoor fun commenced with a trip to the library after a snack of apples and peanut butter for both of us. We had some books to return so we returned our books, picked out some new ones and hung out at the library for an hour or so.
Our local library has a little toy area with building blocks for kids and Chase played with two bigger kids for 20 minutes or so before we spent some time reading a few books together.
Eventually we hit the road and popped into the grocery store before making our way home. We pulled in the driveway right as Ryan arrived home from work around 6:30 p.m.
Dinner + Evening
I was glad I wrapped up dinner earlier in the day because we simply reheated the sausage cabbage soup and dug in!
Something about soup and rainy weather just seem to go together and Ryan and I both loved this meal. (Clearly I liked it since it was the second time I ate it in one day!) I threw together a quick fruit salad to serve with the soup as it was heating up which was sweet and refreshing.
Chase got another burst of energy after dinner, so we had a little dance party in the living room before bed. “You’ve Lost That Loving Feeling” was our song of choice and we played it on repeat. We laughed pretty hard as Chase did his best to jump off the ground and flail his arms about. I LOVE that song and LOVE dance parties with my boys and Sadie… even if Sadie prefers to jump up and body slam into us as her signature dance move.
Chase was down for the night around 7:45 p.m. and I joined Ryan on the couch for half an hour or so of chatting and relaxing while I ate a Yasso Greek Yogurt bar before we headed upstairs to bed.
Since we climbed into bed quite early, I reached for the book I started more than a week ago. I ended up reading half of The Hand That Feeds You in one evening so I left it by my bedside for a while because I wasn’t ready to spend hours and hours reading again and had a feeling it would suck me right back in. Well, it did, and I finished the book around 11 p.m. and proceeded to pass right out once I was done. (For the record, the first half of the book was much better than the second. The book is definitely a page-turner and kept me intrigued the entire time but felt almost sloppy in how it all came together in the end.)
Today should be a good day around here and I’m crossing my fingers for some sunshine. I hope you all have a great Wednesday!

That baked oatmeal with cashew butter looks amazing! My son is allergic to cashews so I can’t have any of that in the house and I miss it dearly! The library is such a great place to head to on rainy days. Happy Wednesday!

Allrecipes has an option on their site where you can type in ingredients you have and it pulls up recipes that use them! You can also exclude certain ingredients too. It’s super handy in our house because I hate having to run out for one or two things!

This recipe is totally happening in my kitchen tonight! I made a stir fry with half a head of cabbage last week, so this is a perfect recipe to cut in half and use up the rest of my cabbage!

I’ve never used the reusable swim diapers before. What brand do you use? Do you have to put any type of liner or anything in before they go in the pool?

I use both The Honest Company and Swim School’s swim diapers. They basically look like little Speedos and you don’t put anything on underneath them. 🙂

Thank you Julie for that great idea of blending the coffee with coconut oil in the mornings. I’ve been doing it within the past two weeks: coffee + coconut oil + collagen = Perfection. I also put some coconut sugar and it tastes delicious.
I tried the collagen in my oatmeal this morning and I thought it was a very convenient idea. Since I wanted to take the collagen after my run, and I had my coffee before that.
