Though I’m sure the lean ground turkey we had on hand would probably taste delicious in that BBQ meatloaf recipe, I figured it might be a good time to try out a different meatloaf recipe that specifically called for lean ground turkey.
Em (of HomecookedEm) saved the day!
She posted a recipe for meatloaf that she found on The Newlywed Chef’s blog, and I was smitten. 😉
The recipe was very simple and came together quickly.
While the meatloaf was a-cookin’, we took Sadie on a walk to enjoy the gorgeous weather. Hooray for spring!
We swung by my office on our walk because I forgot my USB cord. Who knew they locked the building after 5:30 p.m.!? You can get out, but you can’t get in!
After sweet-talkin’ the security guard, I managed to get escorted up to my office. Phew! I thought I might have to post without pictures tonight… And what fun is that!?
When we got home from our walk, the smell of the meatloaf filled our apartment.
Ryan and I immediately started snapping the ends off some green beans to enjoy with the loaf.
The meatloaf was hot, hot, hot when it came out of the oven. I sliced us each several pieces to let cool down for a couple of minutes before digging in.
The addition of the vegetable soup mix and the salsa added such a neat flavor dimension to the meatloaf. Ryan and I both really liked this recipe and decided it is definitely a keeper!
As I was packing up the meatloaf leftovers, I couldn’t resist snacking on another slice. This baby is GOOD!

I’ve always loved meatloaf! It’s like a casserole and delicious meat dish in one! A win, win in my book.
Homestyle Turkey Meatloaf (Adapted by Aly from the Eating For Life Cookbook)
- Preheat your oven to 350 degrees and coat a loaf pan with cooking spray.
- In a large bowl, combine the turkey, onion, egg whites, salsa, oats, soup mix, and black pepper. MIX WELL.
- Press mixture into prepared loaf pan and spread ketchup on top.
- Bake for 60 minutes or until meatloaf is no longer pink in the middle.

I’ve always loved meatloaf…but now that I’m vegetarian, I’ve had to make some pretty big substitutions. There’s a recipe for lentil loaf that I love…but I gotta say, it’s just not the same 🙂

I saw that recipe on HomecookedEm, too! Your version looks mouthwateringly good! Those beans must be fun to snap and cook 😉 Our dogs enjoyed the sun, too, although I don’t know if they looked as regal as Sadie!

I love meatloaf! Maybe I’ll make some tomorrow night actually, it looks that good! My stepdad makes the best (but not the healthiest ;)) meatloaf: he flattens the meat mixture out on plastic, adds thinly sliced ham and swiss, and then rolls it up like a jelly roll.

love the idea of using vegetable soup mix in the recipe. Now…. are you going to make meatloaf sandwiches with your Arnold’s bread thins for lunch? Sooo yummy!

My mom loved loved loved (and still does) to make meatloaf. She would bake it in a heart shaped pan and frost it with ketchup. Yes I have that kind of fun loving mom.
Back in my meat eating days I would love me some meat loaf! Even though I think the name is disgusting!

I’ve actually never had meatloaf before but it always looks so good! And I think it sounds pretty fun to make – lots of mashing things together 🙂

PINEAPPLE MEATLOAF
1 egg, beaten
½ cup quick cooking oats
½ onion, finely chopped
½ green bell pepper (or any color of your choice)
¼ teaspoon salt
1 pound lean ground beef
8 ounces crushed pineapple, drained
BBQ sauce
Combine egg, oats, onion, bell pepper and salt. Add beef and pineapple. Mix well. Place in a 8 x 8 baking dish and bake uncovered at 350 degrees for 35 to 40 minutes or until meat is no longer pink. Top with BBQ sauce and bake for another 3 minutes.
Yields: 4 servings
CALORIES 235.9; FAT 8.6g (3.4g saturated fat); CHOLESTEROL 118.1mg; SODIUM 138.6mg; CARBOHYDRATE 13g; FIBER 1.4g; SUGAR 7.1g; PROTEIN 26.6g

That’s one of my fave meatloaf recipes. I actually got mne from a magazine. I also added in shredded zucchini. I’ve made it w/out meat too adding in beans and other stuff. Yumm!

Loooks fantastic. I love Meatloaf, it’s one of my fav cold weather meals, with mashed potatoes or mac and cheese. I usually make the old fashioned meat loaf from a Campbell’s cookbook.
1 can cream of Tomato Soup
2 lbs ground beef (98% extra lean in my case)
1/2 cup fine dry bread crumbs
1/2 cup chopped onion
1 tbsp chopped parsley
1 egg, slightly beaten
1 tsp salt
dash pepper
Combine all ingredients, mix thoroughly. SHape firmly into a loaf; place in shallow baking pan. Bake in a 350 degree oven 1 1/4 hours. After it has cooked for an hour, you can garnish with cheese or tomato slices, obviously I opted for cheese and bake for 15 more minutes.
