Broccoli Slaw Pasta

Previously I’ve hailed the inclusion of broccoli slaw in salads, but the nutritious vegetable mixture is also fantastic in pasta dishes!

Broccoli Slaw Pasta

The long, thin shreds of broccoli blend into a noodle bowl perfectly, adding volume along with calcium, fiber and a slew of healthy vitamins (C, K and A, among others).

Today’s lunch included a noodle bowl comprised of:

  • Carba Nada egg fettuccine pasta
  • Eat Smart broccoli slaw
  • Sliced Portobello mushrooms
  • Marinara meat sauce

This pasta bowl was so good that I think I’ll be making pasta for dinner tonight. A craving has clearly been sparked!

      i purchase carba nada online at netrition.com (though i hear fresh market stores carry it as well) and i buy toufayan bagels at publix!

    this sounds so amazing…i love broccoli slaw and the great crunch it adds! i’ve never had it with pasta though, so i think you sparked the craving over here too!

    I’ve never tried broccoli slaw. I love mixing vegetables with tomato/marinara sauce though. It makes them very yummy! =)

    I LOVE broccoli slaw. Its also really good if you add craisins to it and top it with that Asian dressing that you like. YUM. Anyway, I made this :http://www.ourbestbites.com/2008/09/thai-peanut-noodles.html , the other night and thought “this is something that Peanut Butter Fingers would enjoy”. I added chicken and lots of broccoli to mine and it was DELICIOUS. My husband and my kids liked it too. Thought you might want to try it.

    What is broccoli slaw? Is it just shredded broccoli stems, broccoli sprouts…? I’ve never heard of it before, but now that you started mentioning it, I’ve been noticing it in grocery stores. I’ll have to try it sometime!

      it’s just shredded broccoli. 🙂 most broccoli slaw packets also include shredded carrots & cabbage. it’s delicious!

    Broccoli slaw is a favorite of mine, but the dish you made with pasta- is it supposed to be hot or cold? It might be a crazy question, just wondering.

    I think broccoli slaw can sometimes be a little bland in salads, but I also haven’t had it in a looong time. Thanks for the new suggestion though, I’ll def need to give this one a try.

    Oh..broccolli slaw…how do I love thee?

    I recently used the leftover bits of a bag to pop in the processor for a veggie hummus. So quick.
