I’ve been a fan of coconut ever since I was little.
When I would go trick-or-treating, I would freak out over a fun-size Almond Joy like other kids would freak out over any king size candy bar.
And let’s not forget the night I ate coconut cake for dinner…
In all my years of loving coconut, I’ve made numerous desserts with coconut and even breakfast protein smoothies featuring coconut, but I’ve never attempted a traditional coconut macaroon until tonight! I had a big tub of unsweetened coconut shavings on hand and after seeing Gina make some delicious-looking macaroons on her blog I knew exactly what I wanted to do with ‘em.
I Googled macaroon recipes and found that they are extremely simple to make.
Score!
I followed an easy recipe from AllRecipes.com and within 20 minutes had a cookie sheet full of delicious coconut macaroons!
Dinner was a small plateful of these bad boys.
I had a grilled cheese and leftover roasted asparagus as well, but these lil’ macaroons definitely stole the show!
If you’re a coconut lover, I promise these will make your mouth happy!

Oh. My. Goodness.
These look AMAZING!!!
Thanks so much for sharing the recipe. I need some coconut pronto. I totally relate to your Halloween story, so I know these ‘roons will be a huge hit.
xo!
I’m cuckoo for Coconuts 🙂 I’m glad you finally made macaroons and that the recipe was a success.
You should try adding chocolate to your macaroons next time. It’s a great combination. But classic macaroons are delicious on their own too
Julie! Holy cow, do you have esp(n)…haha mean girls! I was seriously just thinking about coconut macaroons today and how much I want one! And I’ve never made them either, so you best believe I’ll be following your example 🙂 Thanks!
lol – i love mean girls!
I heart coconut and macaroons! I’ve never made them myself. Gotta try!
Mmmmm…. they look like light, fluffy, golden drops of happiness!
They sound awesome! I’ve always wanted to try to make my own, but I am afraid. I’m not the best baker in the world and they always intimated me for some reason.
I’m OBSESSED with macaroons!
Ooooo I’m trying these soon! 🙂
I had no idea that they would be so easy to make! YIPPEEE..I’m totally making these now 🙂
Mmmmm macaroons are so good!! And I tried Gina’s at HLS- they were absolutely magnificent. Yours look pretty amazing too though- I love how fluffy and white they look!
These look fabulous!! If you love coconut and chocolate, I have an amazing recipe for coconut truffles that’s super easy and they taste just like Mounds bars. Email me if you want it! 🙂
I am seriously addicted to your blog, btw. I found it by accident a couple of months ago and I love it!
K.
Oh I LOVE macaroons. I know they’re great plain, but next time, try dunking them half way in melted chocolate. Amazing!
Yum!! I made a similar recipe a few months ago using the pulp from my juicer and I fell in love with how easy and delicious they are!
I love anything with coconut! These look delish!
Those look amazing. I never understand people that don’t like coconut. It is heavenly.
You should try making them by combining 1 avocado, sugar, and the coconut. I just eyeball the amount of the sugar and coconut. They are so delicious and a bit healthier. Plus they turn out green! St. Patty’s Day treat maybe?
so creative!
Hi Julie,
I was interested in trying out Ashley’s suggestion. Is there a way you can ask her for the direction/recipe for that healthier macaroon recipe?
Thanks,
~ Lea
I need to make those macaroons – they look amazing!!
you should definitely try your hand at a raw-based macaroon. here’s a great recipe i tried earlier this week http://healthyhoggin.com/2010/09/macaroon-fairy/
even the boy loved these. all the goodness and none of the bad 😉 i PROMISE you’ll love them
sounds awesome!
Strangely enought I do not even like coconut but I LOVE coconut macaroons. I made some this past summer and dipped them in chocolate. They were glorious 🙂
It really does sound easy. These are definitely going on my to-bake list!
Yumm! I’ve never made macaroons before either, but anything with coconut in them- I’m down! 🙂
I can never make these — I’d eat it all up myself. I should send you my Brazilian cake recipe that has coconut in the batter, along with chocolate flakes. It’s awesome!
I always mix dried coconut when I bake cookies too. Hmmmmm…
wow i haven’t made macaroons in for-ever!! So delicious though, I can guarantee my dessert would have been chock-full-o those things. try putting some peanut butter on them 😉
ooooooooh. you’re a genius!
I didn’t realize that they were so easy to make!! I’ll have to try this recipe out ASAP.
thats soooo funny! i seriously just had macaroons at my work today and then i looked at your page to see what you ate today and BAM! Macaroons. lol
we’re twins!
Hmm…still not getting e-mails for your new site. I got one that listed three of your blogs…two I had already read and a new one. Then I decided to type the address in just now and there is this new one!
So do I get just one e-mail a day now instead of one for each blog post? Why does change have to be so hard? =P lol
gahhhh i have no idea! 🙁 🙁
Hey, as long as I keep checking back I won’t miss a thing! 🙂
your dessert…i mean dinner sounds awesome 😉
I know someone commented on adding chocolate to the macaroons, perhaps that chocolate could come in the form of white chocolate??!! … I had a batch of white chocolate chip macadamia nut cookies, so the thought of it was freash on my mind lol
oooh sounds awesome!
Never had macaroons before, but now I might have to! These look delish! 🙂
Mmm macaroons, now I want some. Is 8 a.m. too early to make them?
Those look amazing! I’m going to have to give them a whirl this weekend! I’m obsessed with coconut also! My friend bought me coconut flavored coffee that I can’t wait to get into. Mmm! 🙂
What?! I would’ve never thought that making macaroons would be so easy! Good to know 😀
Those macaroons look delicious! I absolutely love coconut macaroons! I definitely need to get some flaked coconut and make this. Mmm!!
I love macaroons! I love them! My mom always buys me the Jenny’s Macaroons and they are oh so evil! (Mainly because I can eat the entire tub in one sitting!)
kelly!!!! i miss yooooou!
I adore macaroons! Well anything with coconut in it.
I love adding coconut extract to my overnight oats. It’s so so good with almond milk and bananas 🙂
I made these for Benny’s dad for his birthday but I dipped the bottoms in dark chocolate and they were sooooo good!~
Love coconut. Love macaroons!
I’m going to have to give those a try. I didn’t realize how simple they were to make. Thanks for sharing!
Too funny. A coworker came to me the other day asking if I had a macaroon recipe! I’ve never tried making macaroon’s before but I’m going to give it a whirl and even pass this recipe on to them! Thanks!
Imagine dunking those macaroons into chocolate. CHOCOLATE covered coconut macaroons.
You shouldn’t have posted the recipe. 🙁 lol
Also? I can’t view your site (as in, images) while I’m at work anymore. I guess that means more commenting coming from me – since I save the BEST blogs for the evening when I can comment away. Lucky you! hehee
