Ryan and I arrived at my parents’ house in St. Pete last night and were greeted with a delicious dinner.
The flowers in the center of the table are from one of my my bridesmaids’ bouquets! 😀
My mom also had the Bride and Groom signs that were on the back of our chairs during the reception of the wedding on the back of our dinner chairs.
We filled up on filet, Asian chopped salad, mashed sweet potatoes and roasted Brussels sprouts.
I had seconds of everything… including the amazing red velvet cake roll we had for dessert.
We spent the entire dinner reminiscing about our wedding day. It was a great one-week wedding anniversary celebration.
Today
Today begins our honeymoon!
My mom helped us kick the day off on the right foot!
Last night she prepared a delicious dish for us to enjoy this morning.
She made baked berry oatmeal by following a recipe she found in a catalog sent to my parents’ home from The Fresh Market.
The oatmeal dish was filling, fruity and extremely delicious.
The recipe makes enough to feed six people, so it’s a great meal to make ahead and enjoy throughout the week if your household doesn’t have that many people.
Baked Berry Oatmeal from The Fresh Market (serves six)
Ingredients
- 2 1/2 c. regular rolled oats
- 1/2 c. steel cut oats
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 2 c. milk
- 1 egg, beaten
- 1/3 c. applesauce
- 1/4 c. oil
- 1/4 c. honey
- 1/4 c. brown sugar
- 2 c. fresh or frozen strawberries
Directions
Preheat oven to 400 degrees. Stir together rolled oats, steel cut oats, baking powder, salt and cinnamon in a large bowl and set aside. In a medium bowl, combing milk, egg, applesauce, oil, honey and brown sugar. Add milk mixture to oat mixture and stir until combined. Pour into a 2-quart souffle or casserole dish and bake uncovered for 20 minutes. Remove from oven, stir mixture and fold in strawberries. Bake uncovered for an additional 20 minutes, until lightly browned. Spoon into bowls and enjoy. Also delicious when topped with milk, yogurt, maple syrup or additional berries.
This breakfast is so filling! It’s definitely a stick-to-your-ribs kind of meal!
Now I’m off to organized my stuff before Ryan and I hit the road for the Keys.
