This afternoon the salmon with raspberry glaze from last night’s dinner was transformed into a raspberry salmon sandwich.
Viola!
I served the salmon sandwich alongside some curried cauliflower that I prepared last night while roasting the green beans we had for dinner. Multitasking at its finest!
Such a good lunch!

I have a few running tricks which sound kinda cruel if you were doing them to someone else, but really work for me 😉
I love the “Just do it” to get out onto the pavement, and then when I’m running I will mess with myself. I’ll say, “Sprint to the next post and you can stop”, but when I get there I see if I can continue on further! Works on the treadmill too, I’ll promise myself a break or slow down at the next milestone to get me there when I’m flagging (e.g. at the next mile marker, which can seem to far away at times!), and when I reach it I feel a surge of accomplishment, and every step after that feels so great! Try it and you’ll see what I mean…
