I love it when I play around in the kitchen and a good recipe actually comes out of my experimentation!
I was craving some kind of a soup this evening and when I opened the pantry and saw clam juice staring back at me, I figured I would try my hand at a homemade vegetable soup with a bit of a seafood flare.
In the end, I had a hot bowl of shrimp and vegetable soup that both Ryan and I gobbled up!
Shrimp and Vegetable Soup
Serves: Two very hungry people
- Prep time: 15 minutes
- Cook time: 40 minutes
Ingredients:
- 1 tablespoon canola oil
- 1 medium onion, chopped
- 2 large carrots, chopped
- 3 celery stalks, chopped
- 2 teaspoons chopped garlic
- 1 (14.5 ounce) can diced tomatoes
- 1 (8 ounce) bottle clam juice
- 1 teaspoon thyme
- 1 1/2 teaspoons Old Bay
- 1 1/2 teaspoons red pepper flakes
- 1 dozen shrimp, peeled
- 3/4 cup corn
Directions:
- Heat canola oil in a large pot over medium heat. Add onion, carrots, celery and garlic. Stir regularly and cook until onion is clear and carrots are slightly tender, approximately 8 – 10 minutes.
- Add diced tomatoes, clam juice, thyme, Old Bay and red pepper flakes and let simmer on medium-low heat for approximately 20 minutes.
- Add shrimp and corn and cook until shrimp are pink or until shrimp are warm if using frozen shrimp.
There is something so satisfying about dipping into a bowl of soup and coming up with a spoonful of healthy veggies!
When Ryan asked me what I used to season the broth of the soup, I said, “Old Spice.”
Huh?
Err, I mean Old Bay.
At least they both smell fantastic in their own special way.
After dinner, we took Sadie on a nice walk around the neighborhood.
Ryan ordered a pair of Injini running toe socks after reading your rave reviews (thank you!) and they arrived today, so he slipped them on for a “test walk” this evening.
When he first looked at the toes in the socks, he said, “How are my alien feet supposed to fit into those little toe holes?”
After a little wiggling, they slid right in. (<—TWSS… I’m horrible, I know.)
Since the weather dipped into the 60s tonight, I put on my new Five Bamboo hoodie that the company gave to me a couple of months ago.
I has been too hot in Florida to wear until now, so I was pumped to finally have a chance to wear it.
The hoodie is nice and long and so, so soft. Plus it has little thumb holes that I think are so neat. Apparently Sadie thought it was awfully comfy too and wanted in for a pre-walk hug. That dog loves soft fabrics!
On our walk we saw an interesting sight.
I tweeted about this before, but there is a man who walks his dog by driving a golf cart around the neighborhood. It totally cracks me up and I’m so glad I was able to snap a picture.
Ryan said we should get a golf cart to walk Sadie, but put it in neutral and make her pull us. Maybe then she’d actually get tired for once!
Off to do some stuff around the house before Modern Family starts!
That soup looks like the perfect comforting soup on a chilly fall day! 🙂 I love the shrimp and the veggies. Too funny that you said Old Spice instead of Old Bay! I love Old Bay seasoning especially on potatoes. So good.
the golf cart dog walking is absolutely hilarious. those are the things i get up for in the morning.
exactly. the first time i saw it, i was working in my office and he drove by. i was cracking up!
I honestly wouldn’t have believed you without the picture. How absurd!
Not only is the picture hilarious, but Katie’s response is equally funny! 🙂
Thanks Julie for such an easy and delicous-looking shimp soup. I’ve been craving some seafood lately, and with it being so dang cold up where I live, having it in soup form is just what I’m needing.
P.S. I kinda love the guy in the golf cart “walking” his dog. Guy’s gotta get exercise somehow. At least he’s being a good owner 🙂
I love when playing around in the kitchen yields yummy things! I just did that tonight with gnocchi and it was so good! The guy in the golfcart walking his dog is too funny! Who does that?
omg. just died laughing at your TWSS
WOW. That dude on the golf cart…I guess sometimes we never know why, ya know?!
I love a good soup–yummmmmmyy 🙂
The soup looks awesome!
The dude in the golf cart is too much; really man?
oh gosh, that guy “walking” his dog is like totally my husband. I can totally see him doing something like that!
AHAHhHAHAH old spice! Oops. That just made my night, ha!
see! you found a use for that little elevated ledge-thingy… toe-shoe-putting-on-stool!
also… i LOVE thumb holes in sweatshirts! i have a northface like that. love it!!
ha! can you tell we’re still at a loss?
Bahaha that golf cart pics is hilarious! Yum the soup looks great! So colourful 🙂
So that’s what you did with the strange step in your living room.. a place for Ryan to put his socks on. 🙂 haha
hahaha, i’m actually wearing socks w/toes right now!
Haha – how do you get those hilarious sadie pics? She seems like constant comic relief.
i take a million and hope a few come out! 🙂
Great interview on Duck in her Pond! Love this recipe. xo style, she wrote
I once kept calling these spice muffins my teacher made once, old spice muffins. It wasn’t until she made the comment that old spice was a deodorant and not a muffin till I realized my mistake. Oops.
I just showed my husband the photo of the man in the golf cart walking his dog – we both thought it was hilarious! Even moreso because that’s totally something my father-in-law would do.
Your soup looks fantastic! It reminds me of a red clam chowder, except with shrimp in it obviously.
That guy walking the dog in a golf cart is hilarious! I guess the next step would be to put the dog on a treadmill?
The soup looks so good. I love seafood soup. Yum!
& that’s what I call a lazy old man haha! Hey we never knew maybe he’s disabled and can’t walk the poor doggy? At least he’s getting out though!
I’m loving this weather! I wore long sleeves on my run, too!
That soup sounds delicious! Its so cold her in Minnesota, perfect soup eating weather!
oh my gosh, how is it possible that both you AND my parents have a golf cart-walker in your neighborhoods? seriously… maybe this guy walks to and from NC to your ‘hood every night.
I need to get a nice thin hoodie for the weather! Florida is peeeerfect right now.
I love the captions on Sadie’s pictures, they are SO funny, remind me of my dogs so much.
Modern Family was SO good tonight. I was dying laughing.
gosh i just love sadie. i want a hug from her too!!!!
I used to see a man all the time on my running route who used a riding lawn mower to walk his dog! Craziness!!
Your creation of vegetable soup with shrimp looks AMAZING!!! I am a huge fan of minestrone or pretty much any type of vegetable soup and when I’m really hungry I’ll add some grilled chicken to it, but NEVER thought of adding shrimp!
PURE Genius! 🙂
I’ve seen people “walk” their dogs in those motorized wheelchairs before…but a golf cart?! REALLY?…I’m so glad you got a picture of that.
Great post Julie! 🙂
Please post Ryan’s thoughts on the toe socks after a run! I always get a blister on only 1 toe because my other toe seems to hit it from a weird angle haha.
I’ve seen someone walk a dog on a segway before, and it was hilarious. I have yet to see the golf car in person!
how funny! i will definitely ask him what he thinks once he runs in them.
HAHA maybe he’s from my hometown…I live outside Atlanta in the “golfcart city”. EVERYONE has a golf cart, and 9 out of 10 people “walk” their dogs on their golf carts on the golf cart paths. It’s hysterical!!
Haha what has this world come to to!! That is certainly an innovative way to walk your dog!
The soup looks amazing
The hoodie is adorable, love the color! Your soup looks like a shrimp dish I get at our local Mexican place. 🙂
i love Sadie hugs!
A man in my neighborhood “walks” his dog while driving VERY slowly in his convertible. It is the strangest sight ever!
haha omg that golf cart picture is ridiculous! Why do people get pets when they don’t want to do anything? Cray-zay!
Maybe he can’t physically walk the dog – at least he is out giving the dog some exercise rather than letting the dog sit inside all day.
geesh.
well yes I understand that but I feel for the most part people tend to be lazy. Of course there are certain circumstances but if he can play golf he can probably manage a walk too.
…not everyone who has a golf cart plays golf. My grandparents use theirs to get around their property, because they can’t walk that far anymore.
I’m not trying to pick a fight, I’m just trying to say that there might be more than meets the eye.
Thats hilarious that a guy cuses his golf cart! My dog loves to pull my bike but he goes so fast that only my boyfriend will do it since im afraid of getting pulled into a tree lol
My parents weekend home is on a golf course, and the neighborhood is mostly comprised of older couples whose kids are adults now. So I’ve seen the golf cart dog walking before there!
It’s actually great entertainment in their ‘hood. At the gym you see some funny moves, at the pools you see some funny ‘aerobics’ classes, and on the golf course you see some awesome outfits. I hope to be one of those funny active people one day!
Just a thought. For everyone calling this man lazy, you have no clue what he might have been through. He could be recovering from major surgery, like a hip replacement or a triple bypass. If so, he’s still letting his dog get some exercise so kudos to him for at least that!
Love the soup recipe! It woudl be extra awesome with some barley, YUM!!
I actually made Asparagus soup last night-first time I used my immersion blender, that thing is crazy!
And here in Boston its perfect weather for soup and hoodies! Love my recently new Nike hoodie w/thumb holes!
Aw good for that man to let his dog get some exercise even though he probably can’t get around that well. So sweet!
LOVE that picture of you & Sadie- she looks like such a little cuddler- makes me want a dog SO bad. Just curious- how allergic are you to dogs?? Because Craig is SUPER allergic- if he is around a dog for about 30 minutes his eyes start to water & he gets really sneezy. Unless of course it’s a hypoallergenic dog- but I know you mentioned that Sadie is almost hypoallergenic..? I can’t recall exactly. But I’m just wondering out of curiosity- I miss having a dog around SO very much!
This is one of my favorite recipes- we eat it every few months and love it. Just one recommendation, and I wonder if you had a typo in your recipe— if you use the amount of red pepper flakes you recommended, it is way too hot. My husband and I both love spicy foods but even for us it’s too hot. I use 1/8 of a tsp of red pepper flakes.
