I will never forget my first Thanksgiving with Ryan’s family. As we were getting ready for the big meal, I asked Ryan about his favorite Thanksgiving dishes and shock and awe followed when the first thing out of his mouth was “Bubbee’s carrots.” His grandmothers carrots!? CARROTS? With stuffing and pumpkin pie strutting their stuff on Thanksgiving, who says carrots are the star of the show!? Ryan. But, you guys, he wasn’t wrong.
Bubbee’s carrots are something special. Something dripping in butter and cinnamon and bacon kind of special.
I very quickly learned that Ryan’s mother and grandmother were the masters at whipping up the ultimate comfort food. Their recipes are the kind of recipes that make you constantly exclaim, “Oh my gosh, this is SO GOOD” and “I need this recipe!!” Ryan’s grandmother, Bubbee, owned and ran her own restaurant for years so she clearly knows a thing or two about delicious food… the kind of food that makes it impossible to resist seconds or thirds or, okay find, sometimes even fourths. We miss her deeply but making her glazed carrots every Thanksgiving keeps her memory alive and helps us feel a little closer to a woman I will always remember as a smiling spitfire who loved books and hated it when I blogged about “all that fitness stuff.” She was the best and so were her carrots!
To make Bubbee’s glazed carrots, you will need the following:
- Carrots
- Cooked and crumbled bacon — extra crispy!
- Onion
- Spices: Cinnamon, salt and pepper
- Brown sugar
- Butter
It’s an all-star line up of ingredients, I’m telling ya!

Ingredients
- 4 cups carrots, peeled and sliced into long strips (julienne), lightly steamed
- 8 slices bacon, cooked (crispy!) and crumbled
- 3 tablespoons onion, minced
- 1/2 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 5 tablespoons brown sugar
- 1/3 cup butter, melted
Instructions
- Combine carrots, bacon, onions, cinnamon, salt and pepper in a one-quart casserole dish
- Sprinkle with brown sugar and butter
- Cover and bake at 400 degrees for 25 minutes

Julie, just wanted to let you know I made these carrots for Easter Sunday and OMG they were amazing. I doubled the recipe and it took forever to peel and slice all the carrots but SO WORTH IT. They were a hit.

Quick question:
For the carrots when you say “slightly steamed” can you tell me how long? I’m afraid I may make them too mushy.
