Dinner this evening was supposed to be last Saturday night’s dinner!
Our traditional St. Patrick’s Day dinner was postponed until this evening because we ended up going out of town for the weekend, leaving the corned beef and cabbage untouched in the fridge.
Thankfully both Ryan and I love corned beef and cabbage and were ready to eat it again even though we had Ryan’s grandmother’s version on Saturday night.
To make the corned beef and cabbage I simply placed the following in a slow cooker:
- 1 2-pound corned beef brisket + peppercorns that came with the meat
- 4 large carrots, chopped
- 1/2 yellow onion, sliced
- 2 bay leaves
- 1/2 head of cabbage, chopped
I placed everything but the cabbage in the crock pot, covered the ingredients in water, and let it cook on high for four hours before adding the cabbage and letting it cook for another hour.
I love one-pot meals!

yum! i’ve never tried corn beef in the crockpot… like most other meats, it sounds and looks so easy! i’d like to try some dessert style recipes in the crockpot too… hopefully readers have some good ones to share!

I love crock-pot recipes!
One of my favorites is from Martha Stewart….I’m not sure of the exact measurements she has, but this is my adaptation to it:
Pour 10 oz salsa,1.5 cup chicken stock, 1 cup dried pinto beans (washed) and a can of chopped green chilles into the crock-pot and stir. Rub 4 small chicken breasts w/ salt and pepper and lay them on top of the salsa mixture. Then add a chopped red pepper and sweet onion to the top. Cook it on low for about 6.5 hours!
It’s like a chicken/bean/veggie stew – soooo good!!

Applesauce is soooo easy to make in a crockpot!! Pretty much you just dump in apple (diced), cinnamon, some water, and some brown sugar and cook it on medium for 5 hours or so. SO delicious!!
Crock pots are the jam, for sure 🙂

McCormick has a couple of nice mixes that really take all the guess work out for you if you are extra crunched on time. I really like their Slow Cooker Italian Herb Chicken yum.

Hi Julie! I love Apple Brown Betty in the crock pot. I take about 4-5 apples, dice ’em (too lazy to peel!), crush graham crackers, throw in some walnuts and a tablespoon or 2 of brown sugar – SO SO good and smells amazing!
I was wondering, how old was Sadie when you started running w/her? I have heard you can hurt your dogs joints if you start to early so I just wanted to get your expertise on the subject.

Applesauce is really easy and really delicious in the slow cooker! You should definitely try it. I like to leave the skins on the red apples and then strain it through a sieve before eating. It makes the applesauce pink!!

If you make a basic brownie mix… and then put the unbaked brownie mix (after adding eggs/water/etc.) to it into coffee mugs and cook in the crock pot.. it makes delicious Brownie in a mug cups! Takes amazing with vanilla frozen yogurt on top… it really melts into the warm brownie.
