Tonight, on our evening walk with Sadie, Ryan and I noticed that one of our little friends returned after a brief hiatus from the neighborhood.
That would be a woodpecker’s handy work.
We noticed the woodpecker pecking into our neighbor’s mailbox a few weeks ago and had a good time keeping tabs on his progress until our neighbors caught on and sealed the hole. (We were seriously bummed out when that happened!)
The sealed hole deterred the woodpecker for a week or so, but today he pecked through and returned. That mailbox will be his home! What a resilient little guy. The animals in Ocala never cease to amaze me.
Dinner
After our evening walk, we came home and made a fast dinner. Neither of us were in the mood to cook so simple broiled salmon and roasted Brussels sprouts seemed like an easy option.
We got a little sidetracked when the salmon was in the oven, so the fish was a bit overcooked, but not too shabby.
Plus my third nectarine of the day!

Love this meal!! My fave! The other night I totally made a “Julie” meal. I roasted brussel sprouts and sautéed some chicken apple sausage in the skillet. I mixed it together and topped it with an over easy egg. I might have died it was so amazing!

After reading your post with the fruit kabobs and goat cheese & honey dip, I tried to think of a lower fat option and tried Trader Joe’s 0% fat Greek yogurt with Honey. It is a delicious desert and my news go-to fav!

That woodpecker is sure perserverent! I have to admit I’m a little terrified of everyday animals right now. We have birds trying to live in our grill. Don’t want to sound like a know it all but I thought I would give you a heads up salmon. I am an RD and I have done a lot of research on this subject
I would be careful buying the farmed salmon from the grocery store. They contain a lot of contaminants, PCBs, antibiotics etc.. (all potential carcinogens) Plus farmed salmon is terrible for the environment.
I would recommend wild alaskan salmon. It is more than double the price but at the moment it is the only type of salmon that is sustainable/safe for us to eat

We had very resilient woodpeckers attack our house last summer. They pecked about 15 holes in the stucco and the largest were the size of tennis balls. Nothing would keep them away and we tried a lot of different things including fake owls, shiny streamers and wind chimes. Then can cause some pretty serious damage. Your neighbours are lucky that it’s just the mail box.
