Recipe Roundups are a monthly feature that began on Peanut Butter Fingers a few months ago as a way for me to highlight past PBF recipes that may have fallen to the wayside over the course of my three years of blogging.
This month’s recipe roundup was a reader’s request: Goat cheese!
I am a big fan of the creamy cheese and love incorporating it into salads, desserts, pasta recipes and breakfast! Hopefully one of the recipes below will pop out at you, too!

Nothing beats Goat Cheese! That egg white, spinach, broccoli quiche looks great! I think it would be so good with sautéed onions.

I have been obsessed with goat cheese lately! I LOVE putting it on my flatbreads! But I also wrapped some in a chicken breast along with some herbs and wrapped that in bacon! Mmmm! My absolute favorite is putting it on my bruschetta!

ooh i just bought goat cheese a few days ago!! i tried figs & goat cheese (which is okay), and goat cheese on salad (yum), but the best is eating goat cheese alone!! HAHA

Last night I hosted bunko at my house and one of the things I made was with goat cheese. You just mix it with Dalmatia Fig Spread and serve with crackers. I also put a little of the fig spread on the top, so it would be pretty. Everyone LOVED it!
I want to try your two ingredient creamy pasta sauce. I think my kids would love it and it is so easy!

I made the barley risotto this weekend. I got worried when the barley started sticking to the bottom of the pot but the dish came together in the end. It was a big hit.
