Don’t you love it when a simple side dish steps up to the plate and unexpectedly steals the show at dinner?
Last night Ryan and I made buffalo chicken burgers for dinner and while they were quite tasty, this ridiculously easy side dish was the highlight of our meal.
I’ve been making roasted cauliflower with curry powder for ages, but the simple addition of ginger really kicked up the flavor and had me immediately wishing I made a double batch. The cauliflower disappeared in a flash!

Description
This recipe for ginger curry roasted cauliflower is bursting with flavor and always seems to disappear in a flash! It’s a nutritious and delicious side dish that’s always a crowd pleaser.
Ingredients
- 1 head cauliflower, trimmed and cut into florets
- 1 tablespoon olive oil
- 1/2 teaspoon ground ginger
- 1/4 teaspoon curry powder
- 1/4 teaspoon garlic salt
Instructions
- Preheat oven to 375 degrees
- Toss everything together in a bowl and pour onto a baking sheet sprayed with cooking spray
- Roast in the oven for 25 – 30 minutes
Though the head of cauliflower I chopped up wasn’t too big, Ryan and I had no problem polishing off the entire thing between the two of us. We loved this dish and were really hungry, but I’d say that under normal circumstances the recipe would likely yield four side-dish servings.

This morning I awoke in a pancake mood!
I made a batch of almond butter pancakes topped with shaved coconut and a bit of syrup.
Plus some extra-foamy coffee on the side!
Yesterday I rediscovered my Aero Latte milk frother and, as I said on Instagram, felt awfully fancy as I sipped a cup of frothy coffee at my desk. Naturally I had to repeat the fun this morning!
A little extra foam makes a normal cup of coffee feel extra special. It’s the little things!

Ooh, I love both curry & cauliflower… I think I’ll definitely have to try this recipe out! I’ve tried roasted cauliflower before, but it’s never come out “right” for me. I really want to have it come out good someday, though, so maybe it’s time for me to try again with this one.

I only had half a head to use so I made that while keeping the spices the same (I don’t mind a bit of spice). I actually think I could have spiced it up a bit more, but what I ended up with was still nice and tasty. I didn’t use nearly as much olive oil, since I like to try to keep that as low as possible, but I still managed to get all of the pieces covered enough so that the spices stuck nicely. The recipe was very easy – will definitely make again.

Fabulous dish! Great for using up other odds n ends of veggies with the cauliflower. I threw in the chopped last hunk of a trusty red cabbage head and an extra onion. It all tastes good in the roasted seasonings! Thanks!

Thanks so much for sharing your Ginger Curry Roasted Cauliflower Recipe. I make it regularly now along with your Garam Masala Chicken and Chickpea recipe. These are two tasty dishes, I must say!!! I was not familiar with Garam Masala until I tried your recipe, and now I am a convert! The cilantro and yogurt/sour cream is a must and really adds to the dish. Thanks again!

I cubed up a sweet potato and added it with the cauliflower and pretty much quadrupled the spices and it turned out amazing! My wife and I are spice junkies 🙂

WOW! I paired this cauliflower with the sausage/peppers/onion dish and holy moly this was good! I may or may not have eaten the whole head of cauliflower I roasted….whoops. New found fav for sure!
