Right after work yesterday, I drove straight to a Junior League of Ocala meeting. The meeting lasted two hours, but the highlight occurred within the first 15 minutes of the meeting when we learned about Help Agency of the Forest. The organization was founded by David Houck, a charismatic pastor who came to speak at our meeting last night. The Help Agency provides food, mentoring, teen pregnancy help and prevention and operates a summer camp, Camp Sozo, to reach children in rural poverty.
The Junior League of Ocala is working with the Help Agency to collect clothing, toiletries and more and I think we all fell in love with David’s organization and and his upbeat and energetic personality.
I didn’t get home until a little after 8 p.m., so I was quite hungry by the time I walked through the door.
Ryan had a late night at work, too, and arrived home five minutes after me, so we were all about a dinner that could be prepared in minimal time.
Thank goodness for sloppy joes!
I followed my usual sloppy joe recipe, but added chopped zucchini to the mix for some added vegetables. We didn’t have any hamburger buns on hand, so I served the beef with a sweet potato topped with a bit of butter. Still delicious!
Workout
This morning I headed to the gym to begin the day with a workout. To warm up, I completed 10 minutes of cardio on the stair master and 10 minutes of incline walking. Then it was time to hit the weights!
I did Workout C from Tina’s Best Body Boot Camp program. I didn’t feel like doing the total body workout on the plan today (Workout B), so I decided to do Friday’s workout today and focused on upper body strength training. This week Tina has boot camp participants doing a lot of pulses to really make our muscles burn and I’m lovin’ it! It reminds me of the bottom halves I used to do all the time in BodyPump that would make my muscles scream.
Breakfast
When Ryan and I arrived home from the gym, all I could think about was an egg sandwich.
I topped a toasted English muffin with cheese and strawberry jelly because I’m a big fan of combining sweet and salty flavors.
Right after breakfast, I headed back out for a very brief 8:30 a.m. meeting with a freelance client that went well. Now it’s time to tackle the day!
See ya after lunch!
Lisa says
That organization sounds awesome. That’s really great and looks interesting and like such a positive thing.
Mmm…sloppy joes are one of my teenaged favorites! I tend to always go for chili over them, but I think I should make up a batch of them.
Fiona @ Get Fit Fiona says
Sloppy joes are one of my favorite meals.
Sonja @ The {Happy} Travel Bug says
What’s your advise on knee pain? Mine has been hurting, especially after step class. I skipped the class this week, but I don’t want to quit. I just don’t know if I should work it out or do low impact stuff for a while. Thoughts?
Charlotte @ Commitness to Fitness says
I do junior league too, it’s a wonderful organization. I’m a big fan of the sweet/salty combo too, i’ve never thought of adding jam to an egg sandwich, i’ll have to give that a try!
Lauren says
I love the egg + jam combination. So good. Especially dippy eggs 🙂
Sarah @ Making Thyme for Health says
Egg sandwiches are the best! I’ll have to check out Tina’s Boot Camp. I canceled my gym membership recently so no more Body Pump, but I do love the bottom halves! Is her Boot Camp something you can do at home?
Katie @ running4cupcakes says
You know I would have never ever thought to put together that breakfast sandwich if I hadn’t read it on your blog and it has become a favorite in my house. The toughest part – deciding what flavor of jelly I want! 🙂
Ashley @ My Food N Fitness Diaries says
Mmm you have me craving an egg and cheese sandwich now! I’m thinking that may be my lunch of choice today. 😉
Michelle@Peachy Palate says
I get so cranky when I’m hungry for dinner; I would have been totally distracted in the meeting for sure!
Beth Sheridan says
I love putting jelly or jam on just about any kind of sandwich I’m eating! I have always loved a Monte Cristo sandwich because I think they have it all figured out with that raspberry jam!
Caitlin says
I thought the same thing about the pulses this week! Bottom half squats and lunges make me want my muscles so tired!
Kim @ Hungry Healthy Girl says
Love sweet and salty egg sandwiches! Bottom halves in Body Pump hurt so good!
Brittany @ DulceVie says
I haven’t had a sloppy joe in forever! And your breakfast looks sooo good 🙂
Meghan @ After the Ivy League says
I had a late dinner last night too and a long day. You still got in something healthy though! I was all about brinner and just had a bagel with cream cheese haha. 🙂
Linz @ Itz Linz says
you totally got me hooked on adding jam to my egg sandwiches!
joelle (on a pink typewriter) says
Do you like being a part of the Junior League? I’ve considered joining the one here in D.C. but am on the fence about it..
julie @ peanut butter fingers says
Yes – I, too, was on the fence and thought it would be a lot like the Junior League in the book The Help… It’s VERY different. We work with lots of different charitable organizations and it’s a great way to meet other women in the area.
GiGi Eats Celebrities says
Food! Mmmm!!! Those sloppy joes look stunning! My taste buds are yelling at me to MAKE SOME NOW! 😉
Annette@FitnessPerks says
That egg/jam combo is the besssssttttt!

I have been wanting to try your sloppy joe recipe for so long! I might have to give it a try tonight. If I do I will let you know how I like them!
Michelle @ A Healthy Mrs says
Whew, you accomplish so much before breakfast — I’m always impressed! 🙂
Leanne says
I’m not sure if you’ve answered this already, but are you working at the gym you also work out at?
Tamara says
Sounds like you have a lot on the go this week!! Sometimes people maintain the notion that those who choose a less traditional job ( such as freelance work, or those who work from home) are much more relaxed, but I think the opposite!! If anything those people are WAY busier than the typical 9-5 job because they tend have more initiative, are super pro-active and driven, and take on so many extra tasks! The job really doesn’t end at 5 pm, it’s nonstop! Good for you for keeping so busy and active, but still always making time for friends and family 🙂
Ashlee says
Sweet & salty is my thang too! Love it! I love pulses too but dont have a workout written up that incorporates them….I’d be forever grateful if you came up with one 🙂
Ashley says
I really need a new muscle screaming workout, and now I’m kinda wanting an egg sandwich for lunch too.
Dana says
You have the best, most yummy breakfast food ideas!! I want that egg sandwich now and I already had my lunch. 🙂
Katie @ Peace Love & Oats says
oh geez, I would not have taken the time to make anything! I got home late last night and had leftovers and greek yogurt!
Lauren @ Rustic Honey says
I have never thought about adding zucchini to my sloppy joes! I will definitely be trying this! Thanks! I need vegetables in my life after a long weekend vacation! Why is that I eat like a complete monster on vacation!?! haha!
Sara @ fitcupcaker says

Angela @ Health's Angel says
I’m impressed by your patience to actually make a meal that late and when you’re that hungry! If I eat dinner late because I’m out or doing something, I always just grab something quick and end up eating snacks…usually!

That organization sounds awesome, I’d love to be involved in something like that. I think I’m gonna look to see if there’s anything similar around here!
I’ve never tried cheese and jam together before, but as a kid I used to make “Chocolate Potato Chip Sandwiches” (those were the days haha!) so I might give it a go!
