Since we’re currently living in temporary housing, the easier the meals are right now, the better. I didn’t pack any of my kitchenware or cooking supplies (except for a blender), so I’m left to prepare meals with the minimal supplies we have available to us in our temp apartment since I don’t want to go out and buy a bunch of things we already own.
So yes, salads have become a staple in my life right now! There’s nothing easier or fresher out there and I love packing a bunch of fresh, seasonal produce into my afternoon or evening meal.
Since I have a feeling a bunch of you out there share my desire for ridiculously easy meals, I wanted to share a salad dressing I whipped together for the first time back in Ocala that has resurfaced with a vengeance over the past week.
It’s simple to throw together and contains ingredients you likely have sitting in your pantry right now.
It tastes light but creamy and is quite tangy and very flavorful. The perfect complement to a salad packed with fresh summer fruit and crunchy nuts!
Easy Lemon Vinaigrette
Makes approximately 1/2 cup of vinaigrette
Ingredients
- Juice of 1/2 large lemon (or 1 small lemon)
- 1/4 cup extra virgin olive oil
- 2 teaspoons balsamic vinegar
- 1/2 teaspoon garlic salt
- 2 garlic cloves, minced
- freshly ground black pepper, to taste
- 1 1/2 teaspoons honey
- 2 heaping teaspoons plain Greek yogurt (2 percent or full-fat preferred)
Directions
- Combine all ingredients in a small bowl and stir vigorously until adequately combined.
- Pour on top of salad or store (covered) in the refrigerator. (Use within one week.)
Enjoy!

It is a good time of year to be without kitchen supplies! Glad you grabbed the blender…smoothies for breakfast, lunch and dinner if you’re stuck…and banana softserve! 🙂

Yum! This looks delish and easy peasy which I love!

Your salad looks yummy–what all did you put in it? Will you share the details? I am kind of new at making fun salads so any help/recipes you can provide would be of great help to me. I can’t wait to try to vinaigrette recipe.
Julie says
Yes definitely!! I am actually planning to do a round up post of summertime side dishes so it will be in that post in more detail! But it was just a base of the spinach topped with strawberries, pears, goat cheese and raw almonds!
mary @ minutes per mile says
i make a super similar salad dressing all the time, but use dijon mustard instead of greek yogurt. i’ll have to try the yogurt version instead!
Julie says
Ooooh! I want to try your version!
Chelle says
Looks yummy and refreshing!
Sarah @ Sarah Sincerely says
That looks delicious! Lemon flavor screams summertime to me. Definitely going to have to give this a try – especially since I do, in fact, have the ingredients on hand!
Dani says
Hi Julie, would you mind giving a suggestion on what to use in place of the greek yogurt? I’m not a fan but the dressing sounds delicious! Thanks!
Julie says
I think you could honestly just omit it!! But I bet sour cream or mayo would work as well though I’m not sure those will appeal to you. I would try it without anything first!
Dani says
Thanks!
Fiona @ Get Fit Fiona says
This salad dressing sounds so good. I bet the honey takes a bit of the sour out of the lemon juice. I’ll have to try this soon!
Traci says
Looks delicious. I’ve been throwing together a simple dressing with just olive oil, balsamic or white wine vinegar, honey, salt and pepper. Hooray for craving salads in the summertime!
Megan @ The Skinny-Life says
I so know what you mean about keeping the oven off! Try living in the desert! That dressing looks great.
ellie @ fit for the soul says
Vinaigrette dressing is probably MY FAVORITE. I remember when I was pregnant….I was all over that stuff since it was one of the few things that would help the nausea go away. Haha! 😀
Sara @ LovingOnTheRun says
Oh this looks quick, delicious and simple! Sounds perfect!
Hillary | Nutrition Nut on the Run says
love strawberries in my salads!!
Karen says
I make this exact salad but I have a little different take on it…I use raspberries instead of strawberries and I use raspberry balsamic vinegar…if you’ve never had it you will really enjoy it!! I also use more vinegar than olive oil, makes it a little less calorie dense so I can use more dressing, he he.
Livi @ Eat, Pray, Work It Out says
I love this spin on the classic oil and vinegar!
Athletic Avocado says
This looks so tasty! I love that there is no added sugar and it is all healthy and clean! I looked at the back of a salad dressing bottle and the supermarket and was surprised to find that there was so many artifical ingredients and so much sugar!
Sandy says
Sounds delicious! I will definitely be trying this! Thanks for sharing!
Julie says
Hope you love it!
Abby says
What point-and-shoot are you currently using?
Kelly says
Yum, can’t wait to try this!

Looks delicious! I always make my own salad dressing, so I’m happy to find a new recipe! Thanks!
KT @Glutes and Ladders says
Hey Julie, is there a reason you prefer to use 2% Greek yogurt? Is it a taste preference or because of texture?
Runner Girl Eats says
This is very similar to the dressing I make all the time. I love making dressings–always tastes so much better than bottled stuff.
Julie @ Running in a Skirt says
I’ve gotten into making my own salad dressings too! They are easy and so yummy. I’m looking forward to trying this one out!

Great alternative for heavy, fatty mayo sauce. It’s fresh and it emphasizes taste of salads.

I’ve been all over homemade salad dressings lately, especially ones with greek yogurt, and lemon-flavored anything is my favorite so guess what I’ll be making tonight? 😉
