But first, the story behind the inspiration… the rather indulgent inspiration.
A few years ago, Ryan met up with his friend Ryan (two Ryan’s!) in North Carolina for a hiking trip on the Appalachian Trail. After a week or so of hiking, they made it back to their car and headed home, making a quick pit stop at Cook Out for milkshakes. At the urging of his friend, Ryan ordered a watermelon milkshake. A love affair was born!
During our drive to Charlotte for Ryan’s interview back in May, we passed a bunch of Cook Outs and Ryan practically salivated when he told me about the glory that is the watermelon milkshake. We pulled off at an exit to order one only to find that they are seasonal and only available at Cook Out in July and August.
Well July is here and Ryan has already enjoyed his fair share of watermelon milkshakes. He bought one for me on the way home from a morning of golf with his friend Eric last weekend and I was pretty sure I wouldn’t like it. Watermelon plus ice cream? It sounded pretty nasty to me. Well, I was wrong and it tasted surprisingly good. Like real watermelon. I was expecting it to taste like watermelon flavor, but it tasted like the real fruit, but creamier.
Last night, Ryan and I ordered milkshakes after our evening swim in the lake and I realized something. For the ridiculous number of smoothies and blended drinks I’ve made throughout the years, I don’t think I’ve ever made one drink with watermelon. This had to change!
This afternoon, I set out to create a summery drink with watermelon as the main ingredient. I wanted something light and refreshing and thought pineapple, watermelon and mint flavors would pair well together.
The end result was a pineapple watermelon and mint smoothie.
It almost inspired me to go out for an afternoon run because I think this drink would be the perfect post-run treat. It’s super hydrating, cooling and slightly sweet.
Watermelon Smoothie

Description
This smoothie is light and refreshing and slightly sweet! The pineapple, watermelon and mint flavors pair well together.
Ingredients
- 1 1/2 cup seedless watermelon chunks
- 3/4 cup frozen pineapple
- 1/4 cup pineapple coconut water
- 5 fresh mint leaves
Instructions
- Combine all ingredients in blender and blend until smooth
- Garnish with additional mint leaves and enjoy

We make watermelon water all summer long! It’s so refreshing and a great way to stay hydrated! We cut up one watermelon and blend it with two cups of water and then I make a small amount of simple syrup to sweeten it a little.

Oh man, Isaac LOVES Cookout too. They just came to Richmond a year or so ago and everyone was so excited — there were super long lines. I’ve never eaten there but I’ve heard the milkshakes are delish and Isaac loves that he can get hushpuppies as a side. 🙂
A watermelon shake doesn’t sound very good to me either but I won’t knock it since I haven’t tried it. On the other hand, your smoothie with pineapple and mint sounds awesome!

I made this tonight, but they didn’t have fresh mint at my grocery store so I made a couple changes. I added vanilla protein powder and greek yogurt to thicken it so it could be a meal. I also threw in a little handful of spinach to get my veggies. So good! I definitely can’t wait to try to original recipe and add a little rum 🙂
