It’s coming your way at the end of today’s post… But let’s back up a bit, shall we?
First things first… How are you guys doing today? Yesterday totally slipped away from me thanks to some meetings related to my new job followed immediately by my usual Girls On The Run Tuesday meet up.
At yesterday’s practice, we discussed gratitude and the thought that gratitude is an attitude. After every lap the girls completed around the track, they had to stop and tell me something they were grateful for and I added it to this list:
I swear I leave every Girls On The Run practice falling more and more in love with the program. It is so rewarding on so many levels and I am coaching the most incredible group of girls. They make me and my fellow coaches laugh all the time, but they’re also incredibly thoughtful and are very willing to participate in nearly every group discussion.
Dinner
I was grateful I took some time to prep dinner in the morning because by the time I arrived home from practice, I was more than ready for some food.
Last night’s dinner was a serious winner thanks to a delicious and ridiculously easy recipe from the Skinnytaste Cookbook!
I’ve been a fan of Gina’s blog Skinnytaste for years and have had the pleasure of meeting her a small handful of times. She is such a kind woman, an absolutely beautiful photographer and a genius in the kitchen! She is always coming up with mouth-watering recipes to share on her blog and her cookbook is a fabulous representation of her work.
Gina gave me permission to share one recipe from her cookbook with you guys and since I know many of you out there are just as obsessed with crock pot recipes as I am, I figured her Crock Pot Santa Fe Chicken would be a good one to highlight! It’s delicious!
Slow Cooker Santa Fe Chicken

Description
A simple, yet completely satisfying dinner! Throw the ingredients into the slow cooker and forget it!
Ingredients
- 24 oz (1 1/2 pounds) chicken breast
- 14.4 oz can diced tomatoes with mild green chilies
- 15 oz can black beans
- 8 oz frozen corn
- 1/4 cup chopped fresh cilantro
- 14.4 oz can fat free chicken broth
- 3 scallions, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp cayenne pepper (to taste)
- salt to taste
Instructions
Combine chicken broth, beans (drained), corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and lay on top.
Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Adjust salt and seasoning to taste. Serve over rice or tortillas and your favorite toppings.

Yes!! I have loved every single recipe that I’ve ever tried from the Skinnytaste blog! And Santa Fe crockpot chicken is one of my favorites! I can’t eat gluten so I like that so many of her recipes are naturally gluten-free…not to mention healthy and delicious.
It was SO good! Ryan and I couldn’t get enough of it! 🙂
I really need to pick up that cookbook! But for now I’m holding out for my Christmas list. 😉

When I train coaches for GOTR I always tell them that they will get just as much out of the program from coaching as the girls do. It is so true. There is a need for a program for adult woman to understand and see their self worth… I believe it would help in raising strong, confident young girls. Have a great day!

That must have been on her blog too because I know I have made it twice before. Absoutely delicious but next time I will change the cook time of the chicken. I found that 6 hours on high had my chicken almost gritty – anyone else find the same or is this operator error? 🙂

it’s still pretty warm here (i live in southern calif.), but i can’t wait to begin using my crock pot as soon as it cools down. definitely putting this recipe on my “must try” list!

I love my crock pot and this recipe sounds delicious! I think leftovers would even be good served cold on a bed of greens – salad style ☺
We do something similar to this all the time! So easy and SO tasty! Although, this version looks a bit healthier than ours 🙂

Aw! This recipe hits close to home because… My parents live in Santa Fe part time! I will be there in.. OMG A MONTH! I haven’t been home in a year!!! Can you believe that, because I certainly cannot! Gina’s recipes are life changing! Been following her blog for years and had this cookbook on preorder. I’ve made the santa fe chicken before and it’s super easy and so delicious (as all her recipes are)!

I love how this looks! I’ve just moved and my slow cooker hasn’t made it to the new place yet, but I will be making this as soon as I bring it. 🙂 It reminds me of the salsa chicken recipe (that I found on Andrea’s blog at “a doctor in the house”) but it’s different and I can’t wait to try it.
This sounds and looks delicious. I especially love crockpot meals when I have a busy week at work and don’t have a lot of time to prep. I could easily throw all of these ingredients into the pot before leaving for work and walk in the door to dinner. I’m heading out of town this weekend and won’t be able to meal prep on Sunday like I typically do so I think this is a must try for next week’s menu with little prep time! Thanks for sharing.

I have almost the exact same thing (minus black beans and cilantro, and add some white beans) cooking in my crock pot! I found it as “white chicken chili” on pinterest. I hope it tastes as good as it smells!

I love crock pot recipes, but find so many ask for 6-8 hours on low. Since I work 9ish hours a day (and my crockpot doesn’t have a timer function), I can usually only cook these meals on weekends. This one, at 10 hours of cook time, is PERFECT! Thanks for posting!
Made this today- it was so good. Cooked it on medium for about 8.5 hours. Made mine just as the recipe called for and wouldn’t change a thing.

In the pic, it looks like soup. Did you add broth or does it come out of the crockpot that way!
