I have a mouth-watering (and healthy!) recipe to share with you guys today. Like most recipes I share on this blog, it’s a recipe that requires minimal ingredients and only a short amount of time in the kitchen. Hello, breakfast sweet potatoes!

Breakfast Sweet Potatoes

On Sunday morning, after a short, chilly walk with Sadie, Ryan and I arrived home in the mood for a hot, hearty breakfast that would fill us up and warm our bellies.

Sweet Potato Home Fries

Ryan was on egg duty while I tackled the potatoes. The prep work was minimal since I previously purchased a big container of cubed sweet potatoes from the grocery store earlier in the week and simply had to season them and cook ‘em up!

Description

These breakfast potatoes are packed with vitamin A, vitamin C, potassium and fiber thanks to the beautiful orange sweet potatoes, so they’re a warm and delicious side dish you can feel good about eating.


Ingredients

Scale
  • 5 cups peeled and cubed sweet potatoes (approximately 1 3/4 pounds)
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 1/2 large onion, diced
  • 1/4 teaspoon garlic powder
  • dash cayenne (optional)

Instructions

  1. Preheat oven to 400 degrees.
  2. Place sweet potatoes and all remaining ingredients in a large bowl. Toss to coat.
  3. Pour onto a baking sheet and bake for approximately 40 – 45 minutes, flipping regular to ensure potatoes are evenly cooked.

I’m happy I made a big batch of the potatoes because we had them for breakfast and dinner on Sunday. They were great with eggs in the morning and also as a side dish with our Sunday night burgers!

Healthy Breakfast Potatoes

On Sunday this weekend, I’m hoping to take the time to prep up another batch of these sweet potatoes to have on hand to reheat with breakfast or dinner throughout the week next week. These breakfast potatoes are packed with vitamin A, vitamin C, potassium and fiber thanks to the beautiful orange sweet potatoes, so they’re a warm and delicious side dish you can feel good about eating. (If you have access to purple sweet potatoes, I think preparing this recipe with a combination of orange and purple sweet potatoes would make the dish all the more eye-catching and appealing!)

    can i recommend you cook up some bacon, reserve half of the bacon fat, then cook up an apple and onion in the other half. put bacon, apple and onion aside. then saute your sweet potatoes in the remaining half of your bacon fat. once they’re all cooked up, add to your bacon-apple-onion mixture and enjoy along with your egg and avo. 🙂 you can change up the spices however you like, i used curry this past week and cinnamon is my usual!

    is the predominant flavor with this recipe more sweet or savory like with home fries? i like the flavor combo but i’m crazy and sometimes the sweetness of sweet potatoes freak me out 🙂

      you could definitely make these with regular potatoes if the sweet potato + salty thing isn’t for you. I think they’re more savory though!

    I usually make my sweet potatoes in the microwave because I am lazy, but I take this same approach when I make kabocha squash. I usually roast half the squash and then enjoy it for days either by itself or thrown into salads. In the winter I just cant get enough!

    Roasted sweet potatoes are seriously none of my favorite things. I’m pretty sure I have them at least 1-2x a week. I’ve never thought to toss them with an onion or serve them for breakfast thought. Yum! Definitely will have to try it!

    Yessssss we eat TONS of sweet potatoes! Also, did you know that eating sweet potatoes increases your chances of conceiving TWINS?!!!! HA! One of the girls I work with had twins and when she googled it, it was a real thing!! I couldn’t believe it!!

    Sounds delicious Julie! I’m all about savoury breakfasts, and if I’m ever more in the mood for a sweet one, sweet potatoes roasted with cinnamon is a really tasty alternative. You’ve triggered a craving now that I think is going to drive me nuts until I get out and buy some sweet potatoes!

    One of my very favorite restaurant breakfasts (that I actually had on vacation in Bend, OR) looked EXACTLY like this! Incredible sweet potatoes, egg, avocado with a delicious salsa! So yummy!

    I always make sweet potatoes as our starch for breakfast! I make a large batch and reheat during the work week! I will have to try this recipe! I make mine by cubing the potatoes and boiling in water with some diced onion. Once tender I drain and throw them in a skillet with some olive oil. The potatoes get an awesome crisp on the outside while staying soft inside!

    We just discovered this sweet potatoe recipe & have become addicted!
    Dice sweet potatoes in cubes
    Season with McCormick chipotle & Tony’s creole
    Put on the grill for 10-20 minutes (depending on how you like them)
    SOOOOOOOOO GOOD!!!!

    Ps. I live in Orlando (lake Mary) & I am so jealous you moved to Charlotte. My husband & I would love to move there one day.
    He just opened a gym in Winter Garden so if it goes well maybe one day we can open one up there!

    Funny, I just made sweet potatoes for breakfast today! I got strange looks at work though, people do not like when you stray from the breakfast food/dinner food continuum.
    I’m lazy and just heated it up whole in the microwave and added avocado.
