My morning didn’t go quite as planned. After I taught my spin class, I checked my phone and had a message. Ryan had an appointment scheduled for this morning that was about 40 minutes away and he was stranded with car trouble.
Fun!!
Thankfully the gym was rather dead today, so I was able to leave, pick him up and take him into work, but that eliminated all chances of a morning blog post since the break I thought I had in my morning was consumed by running around town and then driving immediately back into work. Ryan was very thankful for my help and I’m happy I was able to head home at lunchtime to at least pop in and say hi to you guys at some point today!
So, hello! How about a super simple dinner recipe to round out the afternoon?
Ryan and I are both big-time fish lovers and usually make fish for dinner in our house at least once a week. Salmon is our go-to, and earlier this week I prepared two salmon filets in a new-to-us way that we both loved!
I almost always season fish and broil it, but this time I decided to marinate the salmon ahead of time to try something a little different.
The end result? A flavorful salmon filet that was both easy to make and very, very tasty!
Though we baked our fish after letting it sit in the marinade, you could easily grill it or cook it on the stovetop if you prefer.
Easy Lemon Dill Salmon

Description

Ingredients
- 1/4 cup olive oil
- 1 teaspoon dried dill weed
- Juice of one lemon
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 2 six-ounce salmon filets
Instructions
- Combine olive oil, dill, lemon, garlic and salt to make the marinade. Place salmon in a ziploc baggie with the marinade or pour marinade over salmon in a glass baking dish and cover. Refrigerate for one hour with the skin side of the salmon facing up.
- Preheat oven to 400 degrees.
- Line a baking dish with foil. Remove salmon filets from the marinade and place on top of the foil, skin side down. Discard the marinade.
- Bake for 12 minutes or until salmon flakes easily with a fork. Enjoy!

I have some fillets at home so I might have to try this out this weekend 🙂 Hope the car troubles aren’t too bad and it gets fixed soon! Car troubles are the worst! Just last week I was in the middle of a very important conference call when Ryan text me said something was wrong with his car and I needed to come pick him up from work. Luckily I only had another 15 minutes until I was done. Too bad we had to wait over 2 hours for the tow truck that never showed! After having dinner and heading back home for a bit, we got the call the driver was only 20 minutes away. We wanted to be there to make sure everything went ok when they picked up the car, so our evening was totally messed up and we struggled with only one car for several days while it was getting fixed.
Can’t wait to try this recipe! I haven’t tried one of yours I didn’t like yet!

Such a quick and easy meal! I’ve done something similar before and loved it. I also made a simple Greek yogurt dill sauce (literally plain Greek yogurt and fresh dill with a little lemon zest) to go with for extra dill flavor.

I love love love how easy it is to cook salmon. Just pop it in and its done in mere minutes! And it goes with basically everything 🙂 I had a friend who had a HUGE aversion to salmon during her pregnancy. She even got sick at work once because someone’s coral sweater made her constantly think of it. Thankfully it slowly ended after she gave birth. 🙂

Salmon is hands down my favorite fish, but for some reason I dont make it nearly often enough! I love this simple marinade, and the fact that with fish you definitely don’t have to let it sit in the marinade too long. It just seems to soak it right up!
