Something about tossing Brussels sprouts in olive oil and garlic salt and roasting them in the oven completely changed their flavor for me and all of the sudden one of my most abhorred vegetables became one of my favorites.
I wanted to share one of our go-to ways to prepare Brussels sprouts with you guys today! These Easy Roasted Balsamic Brussels Sprouts are simple to make and a definite crowd-pleaser (if your crowd is the veggie-loving type, that is). The best part is that this recipe includes ingredients you likely already have in your pantry, so there’s no need to shop for new spices or anything out of the ordinary. Sometimes simple is best, right!?

Description

Ingredients
- 4 heaping cups Brussels sprouts (cut in half with ends discarded)
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon garlic salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Preheat oven to 375 degrees.
- Toss Brussels sprouts and remaining ingredients in a large bowl to coat.
- Spread Brussels sprouts on a cookie sheet and roast for 20 – 25 minutes

(When we prefer our Brussels sprouts have a touch of sweetness, I’ll add a drizzle of honey to the mix before roasting!)
Brussels sprouts pop up on our menu once a week or so these days and though we typically enjoy them as a dinnertime side, I actually ate Brussels sprouts for breakfast (along with fresh fruit and walnuts) last week as well. I just topped some leftover Brussels sprouts with two dippy eggs and toast and thought the runny yolks added a delicious sauce to the vegetables. Not a bad way to sneak in a serving of veggies first thing in the morning!
If you decide to give these Brussels sprouts a try, I hope you enjoy them. They make a fantastic side dish for just about any meal, but we love them as a side with salmon, meatloaf and baked chicken if you’re looking for some ideas. Yum!

I first tried Brussels sprouts after reading a recipe in Clean Eating Magazine, and have been hooked ever since (except that one time I was at Golden Corral, and they had them steam. Those were so flipping nasty! Blech!). Roasted is DEFINITELY the way to go with baby cabbages. 🙂

I fell in love with them last year! They get such a bad rap yet are so good! My husband likes to cook them in a frying pan (they get crunchy like they would in the oven) and we finish them off with some maple sugar. We also like to chop them up in the food processor and cook in a pan with some leftover bacon grease and chopped onion. Then we add in bit of bacon once cooked. Delish!

You may be OK with the 5am parties (in which case- ignore the rest of this blurb). I cringed at the sound of that 5am feeding because it was a bear trying to put my daughter back down. Welcome, the swing. After the 5am feeding, Emma was swaddled, white noise blaring, and into the swing she went. It worked like a charm and I could sleep until about 8. Just a thought!

I LOVE brussels with eggs for breakfast! Question – how do you make your dippy eggs? I love a slightly runny yolk, but never seem to be able to get mine right (either I break a yolk, overcook the yolk, whites are a bit undercooked, etc…). Yours look just perfect. How do you do it?

Hi Sandy! I try to flip them once the white part of the egg looks solid/white. I only let it cook on the other side for a very minimal time to keep the yolks runny since that’s my favorite part!

Brussels are my fave veggies, and i always make them with balsamic & sea salt (and a lil EVOO). my fave is to put them over a bed of arugula with soft boiled eggs and cherry tomatoes. SO GOOD. i never ate them til i was an adult, though — i wouldn’t have touched them growing up!

I will have to try this next time I feel like going out on a limb and trying brussel sprouts! I’ve only had them sautéed and unless they are drenched in oil, honey and vinegar I am NOT a fan. Maybe I will try roasting them though and see if I like them better that way! I love pretty much all veggies but Brussels have been a struggle!

Yum – I must try this out! It’ll be a nice variation to the usual preparation of brussels. Another easy, peasy way to prepare them is to mist them with cooking spray + sprinkle of s & p then broil them in the oven. But watch them closely cause they’ll cook faster than you’d think!

I’m totally with you on, they were gross until I roasted them! Now I can’t get enough of them! One other thing that works and actually is a little quicker, is to roast them on the BBQ. We’ve been doing that a lot lately since it’s been so HOT in Oregon this summer. They actually only take about 15 min on the BBQ and then you don’t have to heat up the house with the oven!

I learned to love brussel sprouts as an adult too! I like cooking the shaved ones with onions and then adding them to a scrambled egg mixture.
Btw, I never ever heard of the term “dippy eggs” until I read your blog! I’m fascinated with regional etymology all over the country (example: we call soda, “pop”, here, and we refer to your dippy eggs as fried eggs, and we use “grandma” or “gramma” instead of “meemaw”, which is another term I only heard for the first time in the last decade etc.). So I had to look up the etymology when you first mentioned dippy eggs, and thought this was interesting. “Over easy” fried eggs are also commonly referred to as “dippy eggs” or “dip eggs” by Marylanders, by Pennsylvania Dutch persons living in central Pennsylvania, and by those living around them, mainly due to the practice of dipping toast into the yolk while eating.” From wikipedia and elsewhere. Wondering if your family has east coast origins – Maryland/Pennsylvania? Anyhow, I find this stuff fascinating and thought I’d pass it on. It’s been awhile since I had scrambled eggs with shaved brussel sprouts, might have to have them this week!

I’ll try those both ideas : garlic salt and the balsamic one too. I love to slice them in 3 or 4 thick slices, I ake them “sauté” in a friying pan until they started to roast, from there à add half cup of water and I cover them for 5-7 minutes, until there is no water left. I seasoned them with a little bit of salt or salad seasonning, a bit olive oil ! Yummy little things with eggs, salmon, chicken….. everythin in fact ! hihiihih

I am totally obsessed with roasting veggies. Roasted carrots, broccoli, peppers, and BRUSSELS SPROUTS are so much better after roasting IMO! I’ve never tried it with balsamic though – I’ll test it out this weekend.
