Fortunately the never-ending bouncing comes along with all sorts of facial expressions that thankfully amuse me to no end. But even with cute baby expressions to look at all day long, by the end of the day, sometimes I feel like I need a little pick-me-up. My treat of choice is typically something sweet, such as this coconut dessert popcorn I made last week. It was so good that I’ve made it two more times since and love the way it’s perfectly portion controlled for one person!
And you better believe it was an easy recipe I could quickly prepare while Ryan took over Chase Bouncing Duty before he was ready to eat again.

Description
If you love coconut and find yourself in the mood for something sweet, salty and deliciously crunchy in the near future, I think this recipe may be right up your alley.
Ingredients
- 3 cups air popped popcorn (preferably freshly microwaved and a bit warm)
- 1 tablespoon coconut butter
- 1/2 tablespoon Earth Balance Coconut Spread (you can also use more coconut butter if you prefer)
- 1/4 teaspoon honey
- 1 tablespoon unsweetened coconut flakes
Instructions
- Combine coconut butter, coconut spread and honey in a large microwave-safe bowl. Stir together and microwave until slightly runny, about 20 seconds.
- Pour popcorn on top of coconut butter mixture and toss to coat.
- Sprinkle with coconut flakes (adding more if desired), allow to cool slightly and enjoy!

Looks so good! I used to strap my son in a carrier and walk back and forth in our house. I even learned to nurse in it!! Our son had pretty bad colic for about 3 months so that was rough!

My 6 month old little girl was the same! We ended up getting a seat called the baby Bjorn bouncer. The babes bounce themselves with their kicking and you can bounce them with ur foot!!!

Popcorn looks amazing. Always a great snack, especially for nursing mamas! My son is the same way as chase with the bouncing! His pediatrician said that if you are very active during pregnancy (more than likely bouncing around in some way…), your child will enjoy that out of the womb.

I’m not a big coconut person but that cinnamon butter popcorn sounds awesome.
For my first daughter it was the swing. The best baby swing you can get is called a mamaroo. It moved in several different motions and I think there is even a kind of bouncing motion. You should look into it.

My daughter is an hour older than Chase! Do you wear him at all? Our kiddo loves the Baby k’tan active and she’s big enough for the hug hold now. Baby wearing + sitting on a yoga ball = happy baby in our house!

After I read your comment, I tried wearing him in the K’Tan facing out (supporting his head a lot, too) when he was up and wanted to play/bounce and he did really well! I tried the K’Tan a few weeks ago and I think he was too small for it then, but I’m hopeful it will work well for us now/soon!

Try the newborn hold when he’s fussy…our little girl would automatically fall asleep and it turned around me fussy evenings for us. I’d stick her in it and she’s calm right down and I could get tons done around the house. She’s 4.5 months old and I still use it often and can still get her to nap in it when we are at church or out doing other things. Get him used to it now and it will be a great tool later.

And I should note now we have to use the hug hold instead of newborn but Chase is definitely small enough for the newborn and will love the containment!!

I’ll add that we have the Boba wrap and use it in a way that’s just like the newborn hold in the K’tan, and our 3-week old daughter loves it. What works best is to put her in it when she’s getting drowsy, and then go for a walk immediately. She’s usually asleep within a few minutes, and she’ll stay asleep in there until her next feeding. It’s just coconut ground up to make a paste/butter. If you like coconut, you will LOVE it. So addicting!

I am just beginning to try! He was so, so tiny at first that I couldn’t get him comfortable or positioned in a way where his chin wasn’t touching his chest, so I am hopeful it will work better now!

Keep trying! The earlier you get him used to it – the more likely he will like it in the future! Just make sure he’s always facing you because it’s not good for his spine to face out. I’m sure there are great baby wearing groups in your area to give you tips! I have a sling that I can put him on the side so he can face out (once he was closer to 11 pounds), but is still in the right position. (PS – I love your blog!)

Sounds great! I love popcorn. My friend made a brown butter version of rice crispy treats but subbed corn chex & sprinkled with a touch of sea salt. I typically go for salty not sweet so it was the perfect crunchy, sweet & salty combination. So good!

Popcorn sounds yummy! Have you tried baby wearing? Looks like other readers are also suggesting it. It made such a difference for me with my son! I have the Ergo 360 and the Chimparoo. You’re still close to the baby, but have your arm free. I do have to keep moving with my son, but at least I freely move about the house. The vibrating lounge chairs kind of worked for my son, but I’d have to still bounce the seat. Good Luck!

I just tried the K’Tan again this morning and it went well! When I used it a few weeks ago, it didn’t work well (because Chase was still so, so tiny, I think)… I’m also thinking it may be time to order the Ergo 360. I’ve heard the best things about it!

Have you ever made popcorn “from scratch”? It’s SO easy and you will never go back to microwave. Just a tablespoon of EVOO in a large pot, single layer of kernels, shake it occasionally and wait for the popping to stop!

The constant bouncing days will end, I promise. Until then, invest in a baby k’tan if you haven’t already. That’s the only way I could get things done in the early months. She would nap in there and she loved the swaying/movement when I walked. I could do housework, laundry, cook.. It was amazing. Now she’s 11 months old and I’m chasing her everywhere, trying to keep her out of the cat food and get worried when it it gets quiet all the sudden. Ha!!

Julie, I love this post because it feels so honest. I’m also a brand new first-time mom (my daughter will turn 3 weeks old tomorrow, even though I was due 3 days before you), and I have found motherhood to be extremely challenging so far. I am definitely enjoying it but also just trying to survive each day. To be honest, it’s been disheartening so far reading your posts about Chase because you’ve made everything sound like such a breeze. So today, hearing that he likes to be bounced all day (similar to how my daughter likes to be held or nurse all day) made me feel like babies are just hard. Good thing we’re all in this together! I hope that makes sense. And I hope they both reach a new, easier phase soon 🙂
