The zucchini breakfast bake is a great place to start and also using whipped cottage cheese in lasagna!! I totally understand the texture thing and truly there are so many cottage cheese recipes that take the lumpiness away and make it more palatable if that’s the main reason you dislike it. I’ve been enjoying cottage cheese so much recently! My new favorite combo is cottage cheese with pepper jelly. I spread CC on a Wasa Crispbread (if I need fiber, Ritz Chips for guests/kids), then add just a bit of pepper jelly. Might be a good way for non-CC lovers to get extra crunch and avoid the texture. Another good combo is CC + hot honey! I love the combination of creamy, salty, sweet, and spicy. I’m glad it’s no longer seen as a punishment or diet food because it is really delicious and good for you.

I HATE cottage cheese on its own. BUT, I’ve been putting it in my eggs for years and can’t taste it! I’ll blend it with some greek yogurt, avocado, and lime when we do tacos. It’s delicious and very high in protein!
