I’ve never prepared chicken thighs before but figured their small size would make them cook up nice and fast.
After finding a recipe for spiced honey brushed chicken thighs on CookingLight.com, I decided to follow the first half of the recipe and made a rub very similar to the one I previously used on the sugar ‘n’ spice pork that Ryan and I loved.
The rub included:
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground red pepper
- 1/2 teaspoon paprika
I covered four chicken thighs in the rub and broiled them for approximately six minutes on each side.
Sides included roasted asparagus and half of a toasted whole wheat bagel topped with a bit of Smart Balance.
And then it was time for dessert!
I made his and hers milkshakes for me and Ryan using a pint of Blue Bell cookies ‘n cream ice cream.
Since we were both feeling a little meh today, sipping milkshakes on the couch after dinner sounded perfect!
Ryan and I have big plans to get into bed early tonight to get some extra rest. I also hope to sneak in some reading! I started Andre Agassi’s autobiography, Open, earlier this week and am enjoying it so far!

yum! looks like a great dinner! i don’t think i’ve ever cooked with chicken thighs, mostly just because i’ve been kind of intimidated by them i think. this recipe looks super easy and delicious though. and you can’t beat a milkshake for dessert! 😉
Love chicken thighs! A really easy way to make them is to just get “Montreal Steak Seasoning” and shake it on there then broil. SO tasty and easy.
I could use a milkshake right about now!

My mom gave me a delicious recipe for chicken thighs that is one of my go-to favs now.
Preheat oven to 350 degrees. Marinate boneless, skinless chicken thighs in Italian dressing. Make a mixture of italian bread crumbs (about a cup) and a few dashes of shredded parmesan cheese. Roll the chicken thighs in the mixture and then place in a tin foil lined baking pan. Pour remainder of mixture on top. Bake for about 30 to 40 minutes or until cooked through. SO GOOD! Juicy on the inside and crispy on the outside.

I love cooking with boneless skinless chicken thighs. They are tasty! I’m feeling under the weather too and yesterday, I got a java chip frappe from Starbucks and it hit the spot! Hope you feel better soon 🙂

i love the boneless skinless chicken thighs from whole foods. i know the calorie count is a bit higher than breast meat, but the flavor and the tenderness is incredible! enjoy your night 🙂

Open is SO good! I flagged nearly half of the pages because of all the insightful and thought-provoking comments Andre makes. I’m not sure if you watch Friends, but there is a craaazy story behind Brooke Shields’ appearance on the show (as Dr. Drake Remoray’s psycho stalker). Hope you enjoy the book as much as I did!

Love chicken thighs, yours sound so good! We usually put salt, pepper and paprika on them and put them over kale and sweet potatoes and roast them in the oven, so yummmy!

my dad is a HUGE tennis fan, so i grew up knowing all about the players. he read his book and i heard it was good, so when he was done, he passed it along. i am loving it so far!

Is it just me or did sooo many people have “meh” days today? Truly, I think almost every blog I have read had a little bit of a so-so, meh, kinda day! I know part of my day was like that too (but it was the job part of my day so I couldn’t really blog about it, haha)!

Since you’re fave part of the book was getting to know Hemingway, F.Scott Ftizgerald, and Gertrude Stein, you must see the movie if you haven’t already. I absolutely LOVED LOVED LOVED that book! I was a huge Andre Agassi fan growing up and reading that book allowed to learn so much more about it. I actually saw him play an exhibition tournament a few months ago in Boston and he still played great! You’ll have to let me know what you think of the book!!!
I read “Open” and it was such a great book– I learned some interesting and surprising things about his life. As a tennis player, it is amazing that with some of the things he went through, he was still able to be such an awesome player! I hope you enjoy it!
Mmmm Milkshake. I want one. Hmmm… Get the kitchen back is goal number 1. Then maybe a milkshake.
I’m not a fan of eating chicken thighs (too much fat), but they’re FANTASTIC for making a quick broth! Instead of needing a chicken carcass, just buy a cheap package of thighs with skin, put in a pot with quartered onions, garlic cloves, and whatever veggie remnants you may have on hand or have frozen, and cover with water. Bring it to a boil uncovered, then simmer for two hours. You can also add lemon or orange for some citrus zing!
It’s one of the easiest ways to make homemade chicken broth, and the chicken fat is what helps cure colds. You can also take off whatever meat you want from the thighs to throw into the broth afterward for soup.
Also, Midnight in Paris is AMAZING! After you watch it, tell us how you liked Adrien Brody’s character 😛 It’s short but memorable.
