When I was done working for the day, I headed off to the grocery store to shop for our food for the week by myself. Ryan and I typically do the grocery shopping together, but since I was alone, I took my time and browsed around longer than usual, spending an inordinate amount of time in each aisle.
Tonight also seemed to be free sample night at Publix, so I chatted away with the free sample lady about the latest Apron’s recipe.
Speaking of Publix, a few of you have followed up with me recently about the honey citrus goat cheese dressing that I created for a freelance project back in April, asking when I am planning to share it with you guys. Well, that recipe was created for a Publix publication that will be coming out this summer! I’ll be sure to share it with you when it’s officially out in grocery stores.
Dinner
I arrived home at dinnertime with bags overflowing with fresh produce and yummy food.
Since I had so many good things to choose from, making dinner was easy!
While roasting Brussels sprouts, I sautéed about a quarter of a sliced onion with a chopped portobello mushroom and mixed everything together with chickpeas and a dippy egg.
It was such a simple dinner but the chickpeas and creamy yolk took it up a notch.
Fresh berries are always a favorite.
This evening will be spent unpacking from our weekend in Jacksonville (aka dumping all my clothes in the laundry) and watching The Bachelorette!

I like the term dippy egg! Love how a soft-cooked yolk adds so much richness and creaminess to veggies. I got the idea from a Korean dish I had once and have never looked back!
I love that you use the term dippy egg! That term has always been in the family! I remember when I was young I would sleepover at a friends house and in the morning the parents would ask me how I would like my eggs and I said, “dippy eggs!” and they had nooo idea what I was talking about! I never knew they were called over easy!
Let The Bachelorette countdown begin! I really hope Emily proves to be more interesting – I found her pretty boring last season. We’ll find out soon enough!
We’re having the same kinda night… I was away all weekend too and trying my darndest to catch up on the “packed weekend” laundry…It’s the worst! Can’t wait for the juice to start flowing on the Bachelorette!
Ugh, I’m not sure what’s worse: packing or unpacking! Honestly, I despise both lol.
Your dinner looks so good! Even though I only can eat dippy eggs if I’m dipping toast into them. Otherwise, the runny yolks totally creep me out and I can’t let them touch any of the other food on my plate. Can’t wait for the goat cheese dressing recipe!

When my son was younger he loved plain fried eggs but for some reason he called them “straight eggs”. It was so funny!

I know this is a strange question but do they sell brussel sprouts in Publix? Not that I shop at Publix but I can never find them in the local grocery store here in TX and I wasn’t sure if that was unique to this brand of grocery store or if they really are hard to find! I always have to buy mine at the farmers market.

Speaking of goat cheese (and congratulations on your recipe!), have you tried goat cheese ice cream? I tried some recently (made with fresh blackberries) and I cannot stop thinking about it. It was SO good! I literally cannot wait until I have some again.

Haha you guys grocery shop like us! When we go together James acts like it’s Supermarket Sweep or some kind of crazy timed scavenger hunt… When I’m alone I swear I look at everything! The shampoo and conditioner aisle is my favorite…and James’ personal hell.

I love being along while grocery shopping, then I get to take extra time to look around. I’ve never tried mixing my roasted veggies with a dippy egg. By the way you talk about the combo I am pretty intrigued though, I usually don’t like dippy eggs by themselves, but maybe with the roasted veg combination.

Second- was raised in Chicago but now live in Pittsburgh. I thought my friend was crazy when she referred to her eggs as dippy eggs. Now I see it IS in fact legit and with just having recently added eggs into my diet, I decided to give some dippy eggs a try last week for dinner. Were absolutely delicious over some steamed veggies along with some hot sauce. Thanks for the recipes!! 🙂
i, too, love your name of dippy eggs! i’ve gotten my husband to use it….see my mother makes the most perfect fried eggs (we just call them perfect eggs) ever with perfectly runny yolks and the rest perfectly done…i haven’t found anyone else who can. my husband tries and tries but can’t…i can’t…my uncle always requests them when we visit…..it’s some special gift that was left out of my gene pool. but she’s the only true “dippy egg” maker i’ve known! except, now you!
Do you ever take advantage of the wonderful produce available at local flea markets? We go to the one in Winter Haven and we come home with bags and bags of delicious fruits & veggies. So nice to have such fresh food available year round.
omg!!!!!!! i grew up calling sunny side up eggs “dippy eggs” i seriously thought it was a term my dad came up with to make me eat them so they sounded like fun. he would make them for me and i would dip my bread in the yolk. so delicious.
