Today’s workout was one of those workouts where I felt like I was just going through the motions but I couldn’t seem to motivate myself to get my butt in gear and rejuvenate my workout.
At least the beginning of my workout was good! I completed a 20 minute stair master interval workout before heading into the weight room to focus on strength training my shoulders.
Breakfast
I felt a lot more motivated in the kitchen this morning than I did at the gym and set out to make almond flour pancakes.
I did a quick Google search on my phone and landed on this recipe which I tweaked a little bit by adding half of a mashed banana to the batter, reducing the amount of water the recipe called for and subbing honey for maple syrup.
The pancakes were quite dense, but I have a feeling they are going to do a great job of keeping me full until it’s time for my morning snack.
I also brewed myself a cup of peppermint crème coffee.
I’m trying to savor this flavor since I know The Fresh Market won’t sell it again until the next holiday season. It’s one of my favorites!

As much as I’ve seen almond flour around the healthy living blog world, I’ve yet to try it! I’ll definitely have to go for it one of these days.
I’m also kinda sad that I didn’t eat as much peppermint flavored things during the holiday season, and now I want peppermint ice cream.

I really like almond flour pancakes. I whip egg whites and fold that into the batter to cut the denseness of the almonds and found that works pretty well. Absolutely delicious way to reduce flour. 🙂

I’ve never tried almond flour, but if it’s anything like coconut flour (except for the taste, obviously) I’ll be a fan! We all have workouts like that- don’t beat yourself up 🙂

Girl you must have some serious strength to do the stair master.. that thing freaks me out because I am the clumsiest person in the world and every single time I try and use it I somehow end up falling.. No bueno. And those pancakes look delicious.. Good call on the maple syrup instead of honey.

Protein Pancakes are our next great muscle-building snack to take with you on the go. Whip these up first thing in the morning and they’ll be ready when you need them.
To prepare these, combine 1 cup oatmeal, 1 cup of cottage cheese, 1 cup of egg whites, and 1-2 scoops of your favorite protein powder. Once well mixed, pour onto a pre-heated pan coated with non-stick spray and pour batter evenly in the center.
Allow to cook for 2-3 minutes or until edges are brown and then flip and cook for another 2-3 minutes on the other side. You should easily get 5-6 large pancakes from this recipe.

I think either adding a mashed banana or pumpkin puree is almost necessary for almond meal pancakes. They can be pretty grainy, but very filling! That coffee always sounds sooo good! I wish they had it in a K-cup version!

Keith and I make almond flour pancakes all the time…they’re the best! I’ve also made coconut flour pancakes but don’t like them nearly as much. I just love the heartiness and nuttiness of almond flour. It’s definitely my favorite!
