A bunch of you guys requested the recipes from that evening and after Chef Alyssa’s kind approval, I’m happy to be able to share the recipe for her mouth-watering gluten-free muffins on the blog today. (Note: The muffins are also Paleo-friendly without the chocolate chips.)
I must admit that I find most gluten-free baked goods a little too dense and not nearly as light and fluffy as typical baked foods, but these muffins break that stereotype and had the whole class raving! I think this may have been the first time I’ve baked with olive oil, and I’m wondering if that may be the key? I’m not sure, but whatever it is, these muffins are fantastic and would also make a great base recipe for gluten-free muffins that you can play around with and experiment with various additions like blueberries, dried cranberries and more.

Description
These muffins are fantastic and would also make a great base recipe for gluten-free muffins that you can play around with and experiment with various additions like blueberries, dried cranberries and more.
Ingredients
- 3 eggs
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 1/4 cup almond milk
- zest of 1 orange
- 1 cup almond flour
- 2 1/2 tablespoons coconut flour
- 3/4 teaspoon baking soda
- 3 ounces chocolate chips tossed in tapioca flour (this prevents the chocolate chips from falling to the bottom of the muffins)
- pinch salt
Instructions
- Preheat oven to 400 degrees. Grease or line the muffin tins.
- In a large bowl, whisk together the first 5 ingredients. In a separate bowl, whisk together the next three ingredients.
- Whisk the dry ingredients into the wet ingredients and then fold in the chocolate chips. Spoon the muffin batter into the tins and bake for approximately 10 minutes. Insert a toothpick into the center of a muffin. If the toothpick comes out clean, the muffins are ready.
A quick tip from Chef Alyssa: Do not zest the orange all the way down to the white part of the peel. That will result in a bitter flavor. You just want to zest the very top layer of the orange for maximum orange flavor.
I hope you guys love these muffins as much as everyone from Chef Alyssa’s cooking class did back in January!
YUM. making these. SO excited.
(((OOOOH))))
two hour delay today for school.
Im making too!!
And now, I will lit-rally BECOME Chef Alyssa and make these.
Because, you know…. the Alyssa thing……..
😉
haha of coooourse 🙂
I made the coconut butter salmon and it was SO good. I’m definitely trying these!
awesome!! thanks for letting me know! i’ll pass along your praises to chef alyssa! we love that salmon in our house — just made it again last week!
These look delicious! I am just nervous about the orange zest…not sure how to “zest” correctly! Is there a special tool to do this?
yes! a microplane makes it really simple! here’s a video demo, too –> http://www.realsimple.com/food-recipes/cooking-tips-techniques/preparation/zest-citrus
Looks awesome! I am so glad that I have a zester because all of a sudden I have needed it more and more. I have been doing Blue Apron for about a month and it makes some of the recipes much quicker (you definitely don’t need one though to make the meals).
Anyway, thanks for sharing!
I’ve heard such good things about Blue Apron! I’m considering a subscription to up my (nearly non-existent) cooking skills. 😉
Always, Anita
I have so many good things to say about it! If you want to try it out, the link at the bottom of my review has 2 free meals: http://erinsinsidejob.com/2015/02/blue-apron-review/
Oh wow these look amazing! I love the classic chocolate orange combo, and such a great tip about the chocolate chips – I’ve never heard that before.
oh yum! Thanks for sharing. Need to go aquire some coconut flour.
Im a big paleo baker and these were good! I replaced the olive oil with coconut oil, left out the tapioca starch and had no problem with the chocolate chips sinking, and i squeezed a tablespoon of fresh orange juice into the batter. Mine only made 6 regular size muffins and took an extra 10 minutes to cook. Are the muffins pictured mini muffins or regular size?
Regular size! Mine did make the full 10 — so strange abt the difference! And good to know about the coconut oil! I’ll have to try that because I love coconut oil everythingggg. 🙂
MUST make these! They look soooo delicious!! Thanks for sharing 🙂
Ummm these look like they NEED to make an appearance on Saturday mornings at our house!
Oh! These look so good. I love the orange and chocolate combination. I want to find a cooking class like Alyssa’s in my area. Oddly enough, I just moved away from NC, but I’ll have to try to find something like this in Nashville!
Thank you ! Just wondering, are you still on Pinterest? Would love to be able to pin the recipe!
Yum! I love how you used maple syrup in these!!!
Loooove using maple syrup in recipes!! So good 🙂
I never would have thought to include Olive Oil, these look absolutely delish! Thanks for sharing!
Those look so delicious! Pinning the recipe for later. Thanks for sharing Julie!
Thank YOU for pinning 🙂
These sound delicious! Orange and Chocolate really is the best combo.
Oh wow! These look and sound amazing. Orange with chocolate is such a brilliant combination!
I LOVE orange and chocolate combos!
Mmmm…orange + sweetness is delicious. There’s a restaurant in town that is famous for the most divine orange rolls drizzled in a sweet glaze. SO yummy!
Omg these look so good!!
Julie, do you need to use light olive oil or can you use regular? I am worried about the olive oil taste being strong. Thanks for the recipe!!!
These look amazing! If a baked good has chocolate in it, I’m pretty much sure to love it!
These look great! I wonder if they’d be just as good with Lemon zest instead of orange…I think I am going to give them a try!
Those look delicious!! I may try to see what an egg replacer & using apple sauce (in place of the oil) would do to the muffins – I love the idea of orange & chocolate together!!
These look so good! I also happened to have pretty much all the ingredient (minus tapioca starch), so this weekend they are bound to me made! Mmmm! Thanks so much for sharing!!
These sound amazing! I made orange cranberry cookies for the holidays and they were delish. I love the different ingredients that these muffins use!
Yay for gluten free! These look awesome!
I made these today!! Amazing!!!! I subbed applesauce for the olive oil since I didn’t have any oil..and they came out perfect!!!!! Thanks SO much for sharing!
My 10 year daughter is so into baking right now – I am putting these on her list so I can enjoy something too!! Thanks for the recipe! Will make this weekend!
Aw! That’s awesome!! Hope you enjoy them together! <3
