Sweet ‘n’ spicy roasted almonds! I think I’m in love.
Once we arrived home from the Girls On The Run 5K on Saturday, Ryan and I knew we wanted to spend the rest of the day outside. The sun was shining and temperatures crept into the low 80s. It was too beautiful to stay indoors so we decided to spend the rest of our Saturday on the lake.
With Sadie, of course!
Knowing we’d be boating for hours meant we had to plan ahead and pack plenty of drinks and snacks. I had a bag of whole raw almonds on hand and they served as the inspiration behind this quick snack that took me no time at all to throw together while Ryan filled a cooler with ice, water bottles and more munchies.
I tossed the almonds in melted coconut oil and a splash of maple syrup seasoned with cinnamon, cayenne pepper and curry powder.
The end result was a sweet and slightly spicy batch of roasted almonds that we could not stop eating. Be warned: These little babies are quite addicting!

Description
I tossed the almonds in melted coconut oil and a splash of maple syrup seasoned with cinnamon, cayenne pepper and curry powder. The end result was a sweet and slightly spicy batch of roasted almonds that we could not stop eating. Be warned: These little babies are quite addicting!
Ingredients
- 2 cups raw almonds
- 1 tablespoon + 1 teaspoon tablespoon coconut oil, melted
- 1 teaspoon maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon curry powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
Instructions
- Preheat oven to 300 degrees.
- Combine melted coconut oil and maple syrup. Add spices and stir.
- Add almonds to spiced coconut oil mixture and toss to coat.
- Spread out almonds on a cookie sheet sprayed with cooking spray and roast in the oven for 20 minutes, flipping the nuts halfway through.
- Allow to cool and enjoy!
I think these almonds would make a fabulous appetizer addition to a summertime barbeque and would also taste great chopped up and tossed into a crisp salad. Lots of possibilities!

I like to mix the spicy ones (there are 50+ varieties!) with their “cookie nuts … aka salted peanuts covered with a shell of salted caramel cookie”!

That recipe sounds delicious! I love almonds and eat them almost daily. Something shocking that I learned today while searching for bags of bulk almonds on Amazon via Amazon reviews and then some googling- so feel free to do your own research- is that in the US all almonds (even “raw” and “natural” ones) are required to be pasteurized. There are a couple ways that is done, but the cheapest involves spraying PPO on them. PPO is a chemical used in antifreeze and has been linked to cancer. EEK!!! Trader Joe’s and Whole Foods do not use PPO, they steam their raw almonds to pasteurize them. But many of the major almond brands like Blue Diamond and Costco brand use the chemical PPO. I don’t post this to scare you, it is just something that I found out today and am shocked that my “healthy” snack is not as healthy as I thought. Also I am sure you would want to know what you are putting in your body while pregnant.
