Ryan got caught up a little late at work this evening, so I got to work in the kitchen solo. Initially I was going to wait for him to arrive home to grill up the burgers since the grill intimidates me, but my stomach was growling and I figured he’d enjoy having dinner ready when he walked in the door.
Though I wasn’t brave enough to fire up the grill, I did manage to make a mean couple o’ burgers on the stove.
I combined lean ground beef with salsa to make fiesta burgers!
I topped my burger with ketchup, mustard and relish and served it on a a bed of fresh spinach.
Along with the fiesta burgers, we enjoyed green beans with a little bit of butter.
I really enjoyed the addition of the salsa to the burgers. It added a lot of flavor and kept the meat nice and moist.
Oh-so-easy!
I’m about to press publish on this lil’ post and watch The Bachelorette (and watch Frank drop a boooomb)! Ain’t no shame in loving girly reality t.v.! 😀
Question of the Evening
If you were going to make a romantic meal for someone, what would you make?
When Ryan and I were dating I think he was most impressed when I made my first whole roasted chicken with carrots, potatoes and onions, so I’d probably make something like that. It smells fantastic and has that wonderful, comforting homecooked taste!

When I was trying to woo my meat-eating husband, my vegetarian self figured out how to cook chicken served with veggies and mashed potatoes. It was my first – and only! – time cooking meat. It worked! We’ve been married for almost 2 years and have a baby on the way…and I haven’t cooked meat since 🙂

Hmmmm. .. . I would make something like a really good homemade pizza. It’s more my personality than “fancy” food plus I’ve got it down pat.

Adding salsa to burgers is a great idea!! 😀 I always think of filet mignon or pasta as a romantic dish. With chocolate for dessert!

Have you read about engagement chicken? It’s essentially the roasted chicken dish that you described. I remember making my first whole chicken for my boyfriend as a romantic meal… very intimidating! But he was impressed!

One of my favorite “romantic” meals to make my guy is Chicken Alfredo only because it was the first thing I made him and it’s his favorite!

For a romantic meal… cheese fondue, and a main course with garlic… which I realize sounds counterintuitive, but the delicious smell that fills the house makes it seem like you’re cooking up a pro meal!

For my first meal for Craig, I found out beforehand what his favorite food was- like just in a normal conversation- & he said it was Salsburg steak with mashed potatos & peas…so that’s what I made him the first time I cooked him dinner. 🙂
I really do think the way to his heart was thru his stomach…

My boyfriend loves eggplant parmesan! I made it for him when he came back from Iraq and he was VERY happy. Plus I’ll make him cannoli and that makes him even happier. 🙂

Is it bad to say that I take my husband out when we want a romantic dinner? 🙂 OK, well I’d cook fish I think. He’d probably want steak, but we don’t have a grill and that’s the only way I’ll eat my beef.

My attempt at a romantic special dinner was to grill the “perfect” steak with double stuffed potatos and sour dough cheese fondue. Every thing went great except – the grill hates me! I.CANT.GRILL.STEAK.VERY.WELL 🙁

I would make a three course for sure. Something with fish as the main dish would be involved and some kind of red velvet cake for dessert.

it would depend if my boyfriend and I decided to have a cheat meal. So if it were a cheat I would do a tummy pasta dish with a yummy dessert. But if we were being good and getting ready for one of our competitions then it would have to be fish or chicken with roasted asparagus.
