Tonight’s dinner was made at the request of my father.
His guidelines? Something healthy. Something with eggplant.
Ask and you shall receive!
Tonight I took care of our dinner entrée and made my family roasted eggplant lasagna.
Even though Ryan and I love this recipe, I wasn’t sure how it would go over with my lasagna-loving family since slices of eggplant essentially replace lasagna noodles.
I got to work preparing the ricotta cheese mixture while the eggplant slices roasted in the oven.
The mixture included skim ricotta cheese, mozzarella, fresh basil and parsley. My mom has a fresh basil plant and plucked a few basil leaves right off for me to use.
I’ve tried growing basil twice before and always forget about it and kill it, so having a successful basil plant in the house was quite a treat!
After layering marinara sauce with the eggplant and cheese mixture, I baked the lasagna for about 45 minutes.
My mom also prepared a side salad and baked fresh multigrain bread for on the side.
I took a bite of the eggplant lasagna and had high hopes for my family. Fortunately they all gave the lasagna rave reviews and everyone went back for seconds. Success!
I would highly recommend giving this recipe a go if you’re in the mood for a fun and delicious vegetarian dish.
Off to hang out on the couch with the fam and watch The Thomas Crown Affair!
I have never experimented much with eggplant, so I’ll definitely have to try this recipe out! Thanks for the idea! Looks delish!
Looks really good! I also cannot keep a basil plant alive for the life of me. My friend has a huge one growing in her backyard- I’m so jealous. Every time I’m there I’m clipping off a few leaves to take home. Fresh basil is one of my alltime fav things!
It must be nice to be back at your parents house again! It’s such a comforting feeling to be back home. 🙂
That looks great! I love how you incorporated so many beautiful colors on to your dinner table…it adds so much to the meal =) Does your mom have a breadmaker she uses to make multigrain bread, or does she do it from scratch? That sounds delicious, too…(I’m trying to get my family on the home-baked whole-grain bread train)
no – she actually baked up the multigrain pizza dough from our grocery store’s deli! so random, huh!?
That sounds delicious! Gotta try that…thanks for the idea.
Yum that looks great, Julie! Your family is lucky! 🙂
It’s so weird you posted this. I bought some eggplant today so I could make eggplant lasagna tonight, but I forgot the ricotta. 🙁 Oh, well, I’m def. gonna give your recipe a try!
I finally got a new job and I don’t have to work 2 jobs anymore! AKA I can actually cook real food for dinner and I can’t wait to try some of your recipes! Ok, ok…alllllllllll of your recipes!
Yay, it’s good to be cooking for people again!
Gah that looks AWESOME. I could really go for a slice of that (plus that bread!) right now!
What a great request from your dad! I always think of my family when I have lasagna – it’s one of those comfort meals!
That looks delicious! I need to make lasagna more often 🙂
YUM! We’re getting eggplant in our CSA box this week and I will have to try this recipe!!
I have SO MUCH eggplant in my garden…. I planted too much, but I am not complaining about it, I’m loving every single time I go out and pick one!!! YES!
That eggplant lasagna looks so good!!
You killed basil? We can’t get it to stop growing! And it’s from some little square from the back of a Triscit box!
I really want to try an alternating veggie/noodle lasagna….any tips on softening my family up? 😉
apparently i have a black thumb. 🙂
that sounds delicious! I hope I can figure out a way to make it for one!
Your mom made that bread??? It looks sooo good! Does she have a bread maker or does she use bread pans??
it’s pizza dough from the deli that she just cooked like bread! 🙂
That is a brilliant idea!!!! I’m totally stealing it!
Looks yummy!! I love how hearty eggplant still is whenever it is a noodle or meat substitute. Have fun with your family! I love that movie!
Eggplant lasagna is so yummy!!!!
I love eggplant. Just discovered Japanese eggplant, which is a fun and tasty veggie (if you could call a veggie fun 🙂 ) I need to make this while these babies are still in season at the farmer’s market.
I seriously love baked eggplant, especially with marinara sauce! Totally a successful dinner:) Delish!
this looks great! i love the spin on regular lasagna. i wonder if i can get my sons to try this eggplant version….
i was surprised that both my dad AND ryan gave it rave reviews!
If your lasagna loving family gave this dish a giant stamp of approval, then I’ve gotta try it on MY lasagna loving family!
Mmmmm, thanks for the idea, Julie! I have been making more and more veg meals lately (I have strangely lost my taste for meat, it seems) and I have all the ingredients for this in my fridge! So, guess what will be on the dinner menu for tomorrow?!
Have a wonderfully cozy evening. Hopefully ice cream will be involved.
The eggplant lasagna looks great! I have the recipe bookmarked for possible “family dinner” (or boyfriend who eats 4 servings by himself) type meals.
This is totally like how I make my eggplant parmigiana. Looks scrumptious 🙂
I always kill my plants (basil and otherwise) from benign neglect. I just forget to water them! I have a brown thumb.
Looks so light and delicious ! Perfect meal for warmer weather
This recipe looks awesome! I’m definitely going to give it a go since i’ve been trying to limit the carbs. I loved hearty baked dishes. This one seems like it falls into that category.
Yum! I’m not usually an eggplant fan, but this is something that I may like! I’ve had eggplant lasagna before, but the eggplant replaced the meat moreso than the noodles, so I like the sound of yours!
Replacing lasagna noodles is such a great idea, I’ll have to try that! And also..the Thomas Crowne Affair is an awesome movie:)
Yum! My sister is vegetarian and has made a similar dish before..it’s really good!
It looks so delicious! What a great way to health-ify lasagna! I think I may try this soon!
I’m SOLD! I am going to give the roasted eggplant lasagna recipe a try. Thanks!! 🙂
YUMO! I shall be trying both of these recipes! Thanks for sharing pretty lady 🙂
Delicious- This is definitely going to be made asap! I bet leftovers would taste great in a sandwich!
The TC Affair is one of my favorite movies! (I love Pierce Brosnan – so cute!)
I usually shy away from eggplant but I love it in this as a substitute for the lasagna noodles.
Oh man, I’ve always wanted to try eggplant lasagna. Do you think it would work with zucchini? We have some MASSIVE zucchinis at our house! 🙂
I don’t see why not!?
I noticed a remote control on the dinner table picture- you don’t strike me as a television during dinner family.. Do you and your family watch television over dinner? I find myself doing it much more lately 🙁
I was also intrigued by your mom’s multigrain bread! I’m glad others asked about it as well.. I will definitely pick up some dough from the market! I’ve never thought to do that.. Silly me
haha i noticed that in the pic yesterday, too! we usually don’t watch TV during dinner, but yesterday we did b/c my dad wanted to hear about the earthquake in DC.
Mmm…that recipe looks delicious…I love the idea of eggplant (or as we call it here in the UK, aubergine) replacing the pasta…I far prefer veggies! Yum 🙂 Will pop this on my must-make bookmark…sooo many now, lol! xyx
That’s your great recipe! Can’t wait to hear about your nutella granola thing ^^
Looks good but I’ll admit I’m a bit scared of a purple veggie. What does it taste like?
BTW – I’m totally addicted to smoothie bowls and watermelon salads now. Lol! Thanks for the ideas!
it actually isn’t too flavorful! it’s rather bland, which allows it to soak up OTHER flavors! so glad you like the watermelon salad. now i kind of want one…
Very hip and nice choice on the meal! I just crafted up my own version of lasagna, but made it using Zucchini instead of Eggplant and also roasted the Zucchini as well, and then submitted it to website I am free lancing for and they published it! … Glad yours was up to your pops standards…Amen for those fruits and vegetables finding their way back in your diet!
Ooh, thanks for posting that recipe! I can’t wait to try it!!
That lasagna sounds incredible!!!!
Yum! I am always down for lasagna 🙂
Eggplant, cheese, and sauce is a winning combination! I haven’t tried it with ricotta yet…will have to do that next time.
That sounds delicious, Julie. Eggplant is one of my favorite veggies, so I think I need to give this a try!
I am a big fan of eggplant! This eggplant lasagna looks amazing! I’m definitely going to have to try your recipe! 🙂
I had lasagna for dinner last night too but it was an alfredo white lasagna with zucchini and summer squash!!!
