I’m going to be making your pumpkin icebox cake to take to my family’s Thanksgiving this year! And there is pureed pumpkin in that recipe 🙂 I might make your whole wheat pumpkin muffins with the leftover pumpkin puree – I love those, and I like giving them to my almost 1 year old (wahhh) daughter, too! Either those or some baked pumpkin oatmeal – yum.

I have friends who live in Boone, not sure how far out you are but Stick Boy Bread Co. for quick pastries, coffee, etc. or Sunrise Grill for casual brunch are both highly recommended! It will be chilly but a weekend in the mountains always screams “FALL” to me-have a great time!
