Well, I morphed that recipe into another granola recipe today. Check this out!
Almond butter granola!
And you know what? It was just as delicious as the peanut butter version. Coming from a serious peanut butter addict, that’s really sayin’ something!
Almond Butter Granola (Makes eight 1/4 c. servings)
Ingredients:
- 4 tbsp. almond butter
- 4 tbsp. honey
- 1/2 tsp. cinnamon
- 1/2 tsp. vanilla extract
- 2 tbsp. chia seeds
- 2 c. oats
Directions:
- Preheat oven to 325 degrees and spray cookie sheet with cooking spray.
- Combine almond butter and honey in a bowl and microwave until almond butter is slightly melted (about 30 seconds).
- Stir almond butter and honey together.
- Add cinnamon and vanilla to almond butter mixture.
- Stir oats and chia seeds into almond butter mixture, completely coating oats in the mixture.
- Spread oats onto cookie sheet and bake for eight minutes before tossing oats and baking for another eight minutes until granola is slightly brown.
- Let cool until granola is crunch and enjoy!
I made a double batch of this stuff this morning and since the first one is already gone, I obviously need to get this granola out of my house before I turn into an oat cluster.

I think I’ve tried every granola recipe you have .. the peanut butter one was made & eaten the same day you posted it! I may have a minor granola addiction so the way I eat it depends on my mood .. by the handful, with a little milk, in yogurt, on top of smoothies in a bowl .. the possibilities are endless!! :O)

I just made the peanut butter granola this afternoon, and I must say its pretty on point, and then to half the batch I mixed in sugar free fat free chocolate syrup and that added a nice touch. But for me I prefer my oats to be in oatmeal, but this baked granola really brings out a different flavor and texture of the oats! Well done…May just have to pick up some almond butter and try those out!

I had granola once at a Bed and Breakfast I went to when I was a little girl with my family in Maine served with lemon yogurt and fresh blueberries. I have re-created it ever since – and it’s delicious 🙂

Granola is my running late to class breakfast! I eat it on the bus by the handful and like to mix in nuts (like pecans or almonds), dark chocolate chips, raisins, or blueberries. Soooo good!

As an aside, your recipe came in VERY handy as a way to kill 45 minutes with my sister’s 3 antsy kids who I was watching. I gave them each a bowl, the base ingredients, and let them create their own version of the recipe. My fave was my niece’s who added shredded coconut and raisins. Yum!
