Well, I morphed that recipe into another granola recipe today. Check this out!
Almond butter granola!
And you know what? It was just as delicious as the peanut butter version. Coming from a serious peanut butter addict, that’s really sayin’ something!
Almond Butter Granola (Makes eight 1/4 c. servings)
Ingredients:
- 4 tbsp. almond butter
- 4 tbsp. honey
- 1/2 tsp. cinnamon
- 1/2 tsp. vanilla extract
- 2 tbsp. chia seeds
- 2 c. oats
Directions:
- Preheat oven to 325 degrees and spray cookie sheet with cooking spray.
- Combine almond butter and honey in a bowl and microwave until almond butter is slightly melted (about 30 seconds).
- Stir almond butter and honey together.
- Add cinnamon and vanilla to almond butter mixture.
- Stir oats and chia seeds into almond butter mixture, completely coating oats in the mixture.
- Spread oats onto cookie sheet and bake for eight minutes before tossing oats and baking for another eight minutes until granola is slightly brown.
- Let cool until granola is crunch and enjoy!
I made a double batch of this stuff this morning and since the first one is already gone, I obviously need to get this granola out of my house before I turn into an oat cluster.

Well, will you believe me if I tell you that I’ve never had granola?? I’m serious! I’m thinking I’d love it with yogurt+fruit, though, as that’s always a winning combination in my opinion. 😀

Granola is yummy anytime, however, summer time us the best! I take one scoop of lowfat frozen yogurt, topped with granola, a few banana slices and a light drizzle of warm maple syrup….yum 😛

I USED to eat granola in a “yogurt mess”, complete with some Chobani and some fresh fruit. However, I’ve recently discovered that I’m developing some lactose intolerance… so now I’m switched to just by the handful! 😀

I love to eat granola anytime, anywhere usually with a spoon so I don’t drop a crumb! I sometimes eat it in the morning after my smoothie and before lunch and if I have a sweet craving , I’ll eat a bite to satisfy that at any time.

A slice of french toast with one side dipped in granola and then cooked. Gives the soft french toast a great crunchy texture!

I made this recipe last night and I absolutely love it! I just bought my first jar of almond butter a few weeks ago, and although I enjoyed trying something outside the box, I think I’m still a peanut butter girl at heart. Hi! I found your post on Pinterest and wanted to try making this today. I just got back from the grocery store and realized that I accidentally bought steel cut oats. They’re obviously much smaller than regular whole oats. Do you think this will cause a problem? What kind of oats do you usually use? Quick oats? Thanks!
