Has anyone else noticed that daylight is stretching longer and longer?
I know this little lady is loving it!
Longer lasting sunlight means longer evening walks for Sadie which makes her one heck of a happy dog.
After a nice 30-minute walk around the neighborhood this evening, Ryan, Sadie and I headed home for dinner.

I’ve mentioned on the blog before that my dad is a very outdoorsy guy and enjoys spear fishing whenever he gets the chance. I’ve actually gone with him before with Ryan (remember when Ryan shot his first fish?), though I just swam around in my scuba gear while they actually spear fished.
One of the benefits of my dad’s spear fishing trips is that he often brings tons of fish home for my family to eat! A lot of it gets frozen since we can’t eat pounds and pounds of fish right away, but thawing some of his fish and eating it weeks later feels like a treat since he often nabs fish that’s not readily available at the grocery store.
The last time I visited my parents, they sent me back to Ocala with a cooler full of frozen fish. Late this afternoon, I thawed two amberjack filets to cook for dinner tonight.
I tossed the fish in an egg bath before coating them in Italian breadcrumbs and frying them in a bit of olive oil.
Served with ketchup on the side for dipping and roasted green beans!

that’s the first thing my coworkers and i said as we stepped outside tonight- how we cant believe how light it still was! love it… spring will be here before we know it!
YUM! I’ve never heard of amberjack fish- but it sure does look good. I can’t wait for it to change to daylight savings time!!
I love how light it is staying, because I find I am not as tired in the evening now with more daytime! That dinner looks great, I am not even a huge fish fan and this looks delicious! I love the crisp and browned breading.
I’ve never heard of amberjack before. It looks good! But, what does it taste like? Cod? It sort of resembles that. i wish I had access to fish like that 🙂

that’s not blackened, it’s burnt! blackened refers to a mix of seasonings that gives a “blackened” impression. This is simply fish dipped in bread crumbs and pan fried. It should have a golden color if cooked at the right temperature.
I’ve never heard of that fish but that’s just how like mine…blackened. Yum!
I wish I could enjoy the extra daylight, but I am always stuck at work. 🙁

i’ve never even heard of amberjack. as everyone else is asking, i’ll ask too… what does it taste like? what other fish does it compare to?
my stepdad is also a big fisher, so it’s always a treat when he comes with freshly caught fish!

Oh no! When ever I am distracted, I always end up burning my food. And have to pick/scrape the burnt part off.
I guess you were able to save yours, hopefully it did not have a gross after-taste!

I LOVE seafood! I don’t think I’ve ever tried amberjack. Definitely putting that on my list of things to do ASAP. If you want to send me over some of your frozen fish I’m game 😛

That Amberjack looks A.M.A.Z.E.I.N.G! Pictures like these make me wish I lived in Florida. My dad is very outdoorsy as well…fishing is seasonal but he also gardens so I cannot complain!
This is not related to this post (although I did notice that it’s staying light out later just this weekend and it is amazing!), but I just started reading your blog a few weeks ago and came across some posts about Sadie. I looked up Vizsla’s with my boyfriend and we think that a Vizsla might just be the perfect type of dog for us; they have all the characteristics we are looking for 🙂 We’d been thinking along the lines of a pointer but hadn’t heard of Hungarian pointers before, so I have to thank you for that idea.

I am loving the extra day light! It is actually light when I get off work now and for the drive home. Makes such a difference with my mood for sure.

I noticed today that it was lighter a little bit later than usual.. That’s great and all, but lighter later = HOT weather is on the horizon, and i’m not excited about that one bit.
Our freezer is usually stocked with fish through out the summer from our Bahamas trip & other random fishing trips we take through out the summer. I don’t think we’ve eaten amberjack – I caught a bonita jack over the summer, but they are trash fish, no eating.
We like to marinate fish filets in italian dressing then grill them. Very tasty! We do this with grouper or trout. Most of the time, we invite some family over and have a fish fry. mmmm

Yum!! I’ve never had amberjack, but fresh fish is probably one of my favorite meals. One of my favorite parts of summer is eating all of the fresh catfish caught at the lake!

I live in Florida too (tampa) and I have definitely noticed the daylight later and later in the evening! Love it! And how lucky you are to have a fresh, wild-caught supply of fish, that amberjack looks really good!

I’ve never heard of an amberjack fish before. I’m so picky with deciding to eat fish. I usually stick to shellfish but I would like to incorporate some other fish to my diet. I just don’t like fishy tasty fish like salmon.

Do you eat your meals on a full-size dinner plate or on a salad plate? That fork looks HUGE in comparison with the plate. I used to use a salad plate for all of my meals when I was dieting – I didn’t realize you were being so restrictive with your eating.
