Hooray for tasty leftovers! I felt like I was reliving St. Patrick’s Day in my lil’ cube.
I used leftover corned beef and cabbage to make a tasty wrap.
I spread a little light Miracle Whip on a whole wheat tortilla to add a little moisture to the roll up.
It was nice ‘n’ tasty!
For dessert I had a small slice of chocolate cake that was served in honor of a coworker’s birthday.
For as much as I love chocolate, I think I prefer vanilla cake with chocolate icing to chocolate cake with vanilla icing. Still, that didn’t stop me from enjoying every last bite of this cake… and licking the remaining icing of the plate. 😉
School Lunches
If I didn’t pack my lunch or go off campus for lunch in high school, I ate the same thing almost every day: a plain bagel with strawberry cream cheese.
Nutritious, no?
Thankfully my friends and I would often leave school at lunchtime and rotate houses and ransack our family’s kitchens, so I didn’t eat on campus all that often my senior year. Before that, however, the bagel and cream cheese combo was my go-to meal.

My friend Katie sent me a really interesting article yesterday about a teacher who vowed to each school lunches every day.
She’s anonymously documenting her lunches and opinions about the food on her blog Fed Up with Lunch: The School Lunch Project.
The pictures she posted of her lunches look eerily familiar to the school lunches I remember.
I think this woman’s documentation about what children today are fed in school is wonderful and will hopefully open the eyes of some influential people to make positive changes to the meals served to children at school every day.

I never had school lunch, it wasn’t offered in my school district. Everyday from K until 12 I had a lunch I brought from home.

I always packed a lunch, you never knew what you were going to get from the caf and we weren’t allowed to leave. Typically either a turkey sandwich or a tuna sandwich. So exciting.

My dad always packed my lunch 🙂 Usually a PB or salami (that was my favorite in high school) sandwich, some chips or pretzels, and fruit.
From time to time I bought…my favorite was ‘chicken nugget’ day at school..yum!

That is awesome! I am definitely going to follow her along on her journey! I think school lunches are pathetic! 🙁 I always made my lunch in high school. I brown bagged it everyday! Then my junior and senior year we had off campus lunch and I would just go home to my house and eat. My dad worked (and still does) from home so I always liked spending my lunch hour with my Dad. 🙂

Unfortunately, we didn’t have open campus, we always fought for it, but they thought it was too much off a liability:(
So I was forced to eat school lunch….but honestly, our lunches were pretty good!

In highschool our lunches were AWESOME but they were super expensive. I went to an all girls private highschool. The hot lunch program was called ‘food for thought’ how cute is that! I got it 1 term a year. The rest of the year I brought my own school lunches :o)
Now being in the public middle school setting for my Speech Pathology internship I realize how disgusting and caloric the school lunches provided to the kids are. It is sometimes just gross and not balanced like it should be. i.e. “fruit cup” that is really just pure sugar added to a couple chunks of fruit floating in a pool of juice.

i prefer vanilla cake with chocolate icing! it’s weird, i LOVE chocolate, but i HATE chocolate favored cake and icecream (except for the melting chocolate cake dessert..but that’s more fudgy and moist yum!).
interesting about school lunches.. in high school i always brought the same thing – cheese & wheat thins (a massive amount of crackers), a chocolate protein bar and an apple. tasty 🙂

That school lunch blog is really interesting. And I think a great idea. When teaching I would hate seeing the crapola kids would be eating. It always looked so nasty. I really hope lunches begin to improve and become more nutritious. My mom always made my lunch so it was usually pretty healthy. Although she would include a couple cookies or a Little Debbie snack fairly often too. 🙂 Moderation was it back then too! 😉
And how cool you got to go off campus to eat. That was definitely a no go in our school.

In high school, I had cheese-filled bread sticks and frozen yogurt everyday. SOOOOO NOT NUTRITIOUS! I can’t believe I ate that. YUCK.

I made my lunch almost everyday in highschool. Usually a turkey sandwich or PB&J and a granola bar, baked chips, or Sun chips which were my fave.
I had cross country practice after school, so I had to go easy on lunch. We had to run in the middle of the afternoon in Texas heat, and a full stomach was a bad idea.

Now that I am prepping again, your food pics are like porn to me. I come here and drool over the simplest littel things like a bagle with cream cheese! Thank you! No, I really mean it. 🙂

I ALWAYS brought my lunch in high school. I ate the same thing almost every day…a yogurt and pretzels! I am definitely against cafeteria food…it grosses me out so much (and is super unhealthy!).
