Hello avocado toast!
This avocado toast is easy to make and packed with healthy fat and fiber!
After I received an email with a recipe for avocado toast from Top Chef Richard Blais, who is currently partnering with Benefiber, I gave the dish a try and thought it was fantastic! (Ryan gave it rave reviews as well.) The cayenne added a nice kick to the agave mustard and I could not taste the powdered Benefiber at all!
Here is the recipe, shared with Chef Richard Blais’ permission:
Avocado Toast with Agave Mustard
Ingredients
- 2 ripe avocados, shelled and roughly chopped
- 4 slices whole wheat bread, toasted
- sea salt to taste
- 1/2 lemon or lime, juiced
- cilantro or parsley leaves, a few pieces
- Agave Mustard:
- 1/3 cup mayonnaise
- 1/2 teaspoon cinnamon
- pinch cayenne
- 1 tablespoon agave nectar
- 2 teaspoons Benefiber
- 2 tablespoons warm water
- 1/2 teaspoon turmeric
Directions
- Mix Benefiber and water and then combine with mayonnaise
- Add remaining agave mustard ingredients and reserve agave mustard
- Simply mix the avocado with the salt and lime juice and top on the toasted bread
- Drizzle with the agave mustard and top with cilantro or parsley and a squeeze of lemon or lime
As you can see, I changed up the order of the recipe when I made it and spread the agave mustard on the bread before topping it with the avocado. I also topped it with freshly ground pepper which I thought added a nice kick to the avocado toast. Highly recommended!

I just had grapes as a healthy snack!
I drank an Emergen-C this morning to help recover from last night’s festivities. Does that count? 🙂
I drank a lot of water, and I also had a green smoothie with spinach leaves!
I just had lean turkey and corn for lunch with a babybel cheese on the side. Random, but it was left overs.
I had a delicious salad
I had a small handful of nuts packed for a long road trip home.
I had a shiny red apple with peanut butter for breakfast! Yum!
I ate a nice big green juice!
I had a piece of whole wheat toast with a smear of peanut butter and a clementine on the side!

I ate whole wheat spaghetti with marinara sauce and whole wheat garlic toast! Mmmm mmm!
Tried a new yogurt for the new year! Topped it with banana and voila! Little bit of old and new.
Good ole hard boiled eggs!
Peanut butter, of course! Protein makes it a health food in my book 😉
I can’t stand collards, but still wanted to get my greens in on New Year’s Day, so I just made a big batch of my favorite kale salad! Yum!

A lot of water and a small apple!
I had homemade oatmeal with cinnamon, apples, pecans and a little milk.
oatmeal with flaxseeds, pepitas, sunflower seeds, and pine nuts. Protein packed and energizing. 🙂
I made black eyed peas and collard greens for the new year!
I just had a big, yummy salad for lunch!!
I added lettuce and tomato to my hangover bagel to sneak some veggies in!
I had Greek yogurt with some fresh, juicy, sweet Florida strawberries! Now I am working on coupons and a grocery list. Happy New Year, Julie!

OMG! I thought that was PB & avocado! That would be a weird combo!
But the last healthy thing I ate today was french toast with greek yogurt and lots of fruit! So yum and fresh!

I kicked off the New Year with a healthy but filling breakfast with my new fiancé: a hard boiled egg, whole wheat bagel with fat free cream cheese, strawberries, and a cup of tea! Yum! Happy New Year!
Spinach!
When I saw the photo of the avocado toast, I thought you had spread peanut butter as a base with the avocado on top!! I know you are peanut butter fingers but that is too strange a combination! After reading, I understood that the brownish paste was mustard and I think it looks delicious!
One of my favourite ways to enjoy avocado are to spread it on toast ( or toasted pita) with slices of goat feta cheese and sliced tomato. I really recommend it!

I had some plain 2% Greek yogurt and a pear for breakfast! Delicious and simple
I ate a mashed up avocado with salt, pepper and a little lime juice. I are it with blue corn dipping chips, and some fresh raspberries on the side. Yum yum!

For lunch today at work I had Low Sodium Tomato soup, carrots, broccoli, sugar snap peas, cucumbers and a light string cheese!
This morning I ate a bowl of granola cereal! Yummy and satisfying! Happy new year!!! xoxo
Today hasn’t been the healthiest but I had homemade guacamole with tomatoes and it was delicious!!!

New Year’s day brunch did not lend itself to the most happy eats, but I did sneak in a veggie egg white omelet. Yum!
I wish I could say I was a bit more healthy, but my healthy choice this morning was homemade coffee instead of Starbucks… save on calories and sugar… oh and $$$ 🙂
I had some pineapple and watermelon as a snack and some roasted veggies for lunch.
