Hello avocado toast!
This avocado toast is easy to make and packed with healthy fat and fiber!
After I received an email with a recipe for avocado toast from Top Chef Richard Blais, who is currently partnering with Benefiber, I gave the dish a try and thought it was fantastic! (Ryan gave it rave reviews as well.) The cayenne added a nice kick to the agave mustard and I could not taste the powdered Benefiber at all!
Here is the recipe, shared with Chef Richard Blais’ permission:
Avocado Toast with Agave Mustard
Ingredients
- 2 ripe avocados, shelled and roughly chopped
- 4 slices whole wheat bread, toasted
- sea salt to taste
- 1/2 lemon or lime, juiced
- cilantro or parsley leaves, a few pieces
- Agave Mustard:
- 1/3 cup mayonnaise
- 1/2 teaspoon cinnamon
- pinch cayenne
- 1 tablespoon agave nectar
- 2 teaspoons Benefiber
- 2 tablespoons warm water
- 1/2 teaspoon turmeric
Directions
- Mix Benefiber and water and then combine with mayonnaise
- Add remaining agave mustard ingredients and reserve agave mustard
- Simply mix the avocado with the salt and lime juice and top on the toasted bread
- Drizzle with the agave mustard and top with cilantro or parsley and a squeeze of lemon or lime
As you can see, I changed up the order of the recipe when I made it and spread the agave mustard on the bread before topping it with the avocado. I also topped it with freshly ground pepper which I thought added a nice kick to the avocado toast. Highly recommended!

I just had roasted cabbage with olive oil and lemon juice… So yummy, PLUS the old wives tales say you should eat cabbage on New Years Eve for good luck with money! Maybe I took care of two good things today with that dish! 🙂

A homemade green smoothie
I made a shrimp and zucchini barley risotto for dinner. I added in some baby kale and topped it with parmesan cheese. Yum.
I had a homemade peanut butter protein bar!
I started the year off with a bowl of fruit!
I at a detox salad that i found online…chopped carrots, cauliflower, broccoli, sunflower seeds and raisins with an oil free sesame dressing. Delish after the holiday!
The last healthy thing I ate today was scrambled eggs with cheese on whole wheat toast with some sliced strawberries on the side for lunch. I’m a big fan of breakfast foods anytime of the day!
I love yogurt for breakfast and I eat it every morning! This morning I just threw some strawberries in on the go! Can’t wait to try the cheerios with honey that you posted today!
An apple for a snack!
I needed a little pick me up so I just had a mini trail mix snack pack from Trader Joe’s… Perfectly portioned so I don’t eat handful after handful! 🙂

I ate low fat turkey chili with a half ham and swiss sandwich on whole wheat bread. It was yummy!
I need to work on the healthy eating, but I did avoid donuts & fast food that my hubby & kids ate!

Ha, I actually had my own avocado toast before I even read this post. I LOVE avocados! My simple guac is mashed avocado, lemon pepper, garlic powder, and kosher salt. No measuring, just to taste. Add a splash of lime or lemon too if you want. It is the best! My 2-year old gobbles it up and asks for it regularly.
I had cantaloupe, yogurt, and flax cereal! Such a great combination.
