Hello avocado toast!
This avocado toast is easy to make and packed with healthy fat and fiber!
After I received an email with a recipe for avocado toast from Top Chef Richard Blais, who is currently partnering with Benefiber, I gave the dish a try and thought it was fantastic! (Ryan gave it rave reviews as well.) The cayenne added a nice kick to the agave mustard and I could not taste the powdered Benefiber at all!
Here is the recipe, shared with Chef Richard Blais’ permission:
Avocado Toast with Agave Mustard
Ingredients
- 2 ripe avocados, shelled and roughly chopped
- 4 slices whole wheat bread, toasted
- sea salt to taste
- 1/2 lemon or lime, juiced
- cilantro or parsley leaves, a few pieces
- Agave Mustard:
- 1/3 cup mayonnaise
- 1/2 teaspoon cinnamon
- pinch cayenne
- 1 tablespoon agave nectar
- 2 teaspoons Benefiber
- 2 tablespoons warm water
- 1/2 teaspoon turmeric
Directions
- Mix Benefiber and water and then combine with mayonnaise
- Add remaining agave mustard ingredients and reserve agave mustard
- Simply mix the avocado with the salt and lime juice and top on the toasted bread
- Drizzle with the agave mustard and top with cilantro or parsley and a squeeze of lemon or lime
As you can see, I changed up the order of the recipe when I made it and spread the agave mustard on the bread before topping it with the avocado. I also topped it with freshly ground pepper which I thought added a nice kick to the avocado toast. Highly recommended!

I had overnight oats made with almond milk, topped with chia seeds, berries, pecans, and a touch of agave!
I had a steelcut oats with banana and almond butter with honey greek yogurt and almond milk!
I just finished a banana with a scoop of PB!
Currently eating homemade smoky tomato soup for lunch. Nice and warm for the bitter cold Philly is expecting tomorrow.

I had Greek yogurt with almonds, chia seeds, goji berries, mangos, and honey for breakfast. Then for lunch I had kale and spinach mixed with Quinoa, black beans, carrots, and avocado. YUM!

I just enjoyed a late lunch full with fiber! Spinach salad topped with craisins, walnuts, cucumbers and sunflower seeds! YUM!
I had pink hummus (made w/ beets) and homemade pita bread.
Sidenote: Not sure if was mentioned already or not because too many comments to go through but in the recipe it calls for 1/3 cup of mayo for the agave mustard??? I am assuming thats a typo and you meant mustard…

The last healthy thing I ate was breakfast this morning— a serving of steel cut oats topped with cinnamon and agave syrup!
I love avocado! I just ate half an avocado with tomatoes and a little feta cheese (put the tomato mixture in the hole the seed creates.) Delicious!

this looks amazing! I just finished a healthy lunch of 1/2 an apple and a homemade omelette filled with bell peppers, a little taste of ham and salsa – yum!
Love avocado so this would be something I’d try!
The last healthy thing I ate was my breakfast, actually which was an egg white omelet with spinach and a strawberry low fat yogurt w/ granola in it.
For lunch I had ginger cod with asparagus and brown rice, delicious!!
