Hello avocado toast!
This avocado toast is easy to make and packed with healthy fat and fiber!
After I received an email with a recipe for avocado toast from Top Chef Richard Blais, who is currently partnering with Benefiber, I gave the dish a try and thought it was fantastic! (Ryan gave it rave reviews as well.) The cayenne added a nice kick to the agave mustard and I could not taste the powdered Benefiber at all!
Here is the recipe, shared with Chef Richard Blais’ permission:
Avocado Toast with Agave Mustard
Ingredients
- 2 ripe avocados, shelled and roughly chopped
- 4 slices whole wheat bread, toasted
- sea salt to taste
- 1/2 lemon or lime, juiced
- cilantro or parsley leaves, a few pieces
- Agave Mustard:
- 1/3 cup mayonnaise
- 1/2 teaspoon cinnamon
- pinch cayenne
- 1 tablespoon agave nectar
- 2 teaspoons Benefiber
- 2 tablespoons warm water
- 1/2 teaspoon turmeric
Directions
- Mix Benefiber and water and then combine with mayonnaise
- Add remaining agave mustard ingredients and reserve agave mustard
- Simply mix the avocado with the salt and lime juice and top on the toasted bread
- Drizzle with the agave mustard and top with cilantro or parsley and a squeeze of lemon or lime
As you can see, I changed up the order of the recipe when I made it and spread the agave mustard on the bread before topping it with the avocado. I also topped it with freshly ground pepper which I thought added a nice kick to the avocado toast. Highly recommended!

I just had Chicken Tortilla Soup for dinner yum!!
I ate some breakfast quinoa (for lunch), with banana, chia seeds, and nut butter! It was your recipe, actually, and one of my favorites when I have time to cook it up for breakfast and then have a batch of leftovers!
For dinner I had grilled chicken breast with some avocado, cheese and salsa warmed on top – deeeeelish!
I had some Celery and peanut butter because I was craving it hard core today!
The last healthy food I ate today was actually within the last ten minutes. It was delicious cauliflower “popcorn” with olive oil, garlic, ground black pepper, sea salt, and freshly grated Parmesan (cooked in the oven at 450 for 30 minutes!) Highly recommended!

Not sure how healthy this is but I had the spinach egg white wrap from Starbucks today based on your reccomendation. Super tasty!

I just downed a smoothie made with pomegranate, soy protein, strawberries, bananas, and blueberries — yum!
I raided the Whole Foods salad bar for lunch today….everything was delicious!

Dinner was stir-fried broccoli and tofu with a sauce made with liquid aminos and a little siracha.

I’m not sure how healthy this is, but for our NYE dinner, I made lobster tail with EVOO, paprika and pepper with a huge side of fresh broccoli and a fresh homemade crab cake…It was yummy!

Definitely thought this was peanut butter + avocado toast! Was wondering how THAT would taste, haha. I’d love to try Benefiber — your previous posts have gotten me curious about the product. The last thing I ate was a banana with natural, crunchy peanut butter … my FAVORITE breakfast/snack.

We went to Chick-Fil-A for lunch and I got the kids grilled nuggets. They might not be super healthy but they were a healthier option:) Happy New Year!
