Hello avocado toast!
This avocado toast is easy to make and packed with healthy fat and fiber!
After I received an email with a recipe for avocado toast from Top Chef Richard Blais, who is currently partnering with Benefiber, I gave the dish a try and thought it was fantastic! (Ryan gave it rave reviews as well.) The cayenne added a nice kick to the agave mustard and I could not taste the powdered Benefiber at all!
Here is the recipe, shared with Chef Richard Blais’ permission:
Avocado Toast with Agave Mustard
Ingredients
- 2 ripe avocados, shelled and roughly chopped
- 4 slices whole wheat bread, toasted
- sea salt to taste
- 1/2 lemon or lime, juiced
- cilantro or parsley leaves, a few pieces
- Agave Mustard:
- 1/3 cup mayonnaise
- 1/2 teaspoon cinnamon
- pinch cayenne
- 1 tablespoon agave nectar
- 2 teaspoons Benefiber
- 2 tablespoons warm water
- 1/2 teaspoon turmeric
Directions
- Mix Benefiber and water and then combine with mayonnaise
- Add remaining agave mustard ingredients and reserve agave mustard
- Simply mix the avocado with the salt and lime juice and top on the toasted bread
- Drizzle with the agave mustard and top with cilantro or parsley and a squeeze of lemon or lime
As you can see, I changed up the order of the recipe when I made it and spread the agave mustard on the bread before topping it with the avocado. I also topped it with freshly ground pepper which I thought added a nice kick to the avocado toast. Highly recommended!

I had a spinach salad with hard boiled egg, veggies, sunflower seeds, and dried cranberries for lunch. Delicious!
I’m a nanny, so I try to make healthy choices for the girls as well as myself! The last healthy thing we ate today was a snack consisting of delicious grapes and a handful of pretzel thins 🙂
I had a spring mix salad for lunch – we bought way too much lettuce for our holiday get- togethers so now it’s a rush to finish it off before it goes bad! Just made some smoothies with it for tomorrow.

For lunch, I had a fruit bowl with strawberries, blueberries, and grapes alongside a turkey and spinach sandwich on homemade (from Gramma) Swedish rye bread. Delicious and nutritious!
I had crockpot chicken with roasted potatoes and brussel sprouts for dinner!
I just finished a huge bowl of spaghetti squash topped with tuna, mixed veggies, and dressing – yum!
Scrambled eggs with ham and some orange juice! I was in a breakfast kinda mood!
I drank a green smoothie packed with kale, lemon, water, ginger, parsley and more!
Snacking on two crisp orange bell peppers as we speak!
The last healthy thing I ate today was egg whites and turkey bacon! I love bacon and decided to make a better switch to turkey bacon and enjoy it all the time!

I ate a Chobani yogurt mixed with blackberries. Yum!
Egg whites with sautéed onions, mushrooms, and spinach in a tortilla! So, so good. Hope I win!
Last healthy thing I ate was a salad with sunflower seeds, water chestnuts, kalamata olives, tomatoes and a light honey mustard dressing
A baked BBQ rub chicken drumstick and a BIG pile of broccoli! YUM!

I had homemade sunflower butter and banana on a whole wheat high fiber tortilla. It’s not been a good day for healthy eats. But… tomorrow is a new day, and a new year! Healthy starts!
Just came home from a dinner out where I enjoyed a fabulous grilled chicken salad 🙂
I had a shake! Protein powder + spinach + frozen banana + almond milk. Yum! They’re becoming a staple breakfast for me since I had my baby.
