Hello avocado toast!
This avocado toast is easy to make and packed with healthy fat and fiber!
After I received an email with a recipe for avocado toast from Top Chef Richard Blais, who is currently partnering with Benefiber, I gave the dish a try and thought it was fantastic! (Ryan gave it rave reviews as well.) The cayenne added a nice kick to the agave mustard and I could not taste the powdered Benefiber at all!
Here is the recipe, shared with Chef Richard Blais’ permission:
Avocado Toast with Agave Mustard
Ingredients
- 2 ripe avocados, shelled and roughly chopped
- 4 slices whole wheat bread, toasted
- sea salt to taste
- 1/2 lemon or lime, juiced
- cilantro or parsley leaves, a few pieces
- Agave Mustard:
- 1/3 cup mayonnaise
- 1/2 teaspoon cinnamon
- pinch cayenne
- 1 tablespoon agave nectar
- 2 teaspoons Benefiber
- 2 tablespoons warm water
- 1/2 teaspoon turmeric
Directions
- Mix Benefiber and water and then combine with mayonnaise
- Add remaining agave mustard ingredients and reserve agave mustard
- Simply mix the avocado with the salt and lime juice and top on the toasted bread
- Drizzle with the agave mustard and top with cilantro or parsley and a squeeze of lemon or lime
As you can see, I changed up the order of the recipe when I made it and spread the agave mustard on the bread before topping it with the avocado. I also topped it with freshly ground pepper which I thought added a nice kick to the avocado toast. Highly recommended!

The last healthy thing I ate today was a grilled Mahi Mahi salad topped with avocado, tomatoes and black beans!
Just had a protein shake and 1/2 a quest bar to refuel after a run outside and some glute work! 😉

Today I tried laughing cow cheese! I have never had this before. I can’t wait to start using it in recipes to make them healthier. Yum! Happy New Year!

I’ve been slacking with my veggies, so last night I prepared roasted zucchini, squash and carrots! It was amazing and I adore the natural sweetness carrots have when they are slow roasted. Yum!

I went to a Chinese buffet with my parents, and I actually had some salad to make sure that I had a serving of vegetables with dinner!
I just came home from a party where I did a good job of avoiding the dessert table and ate mostly veggies.
Avocado toast is one of my absolute favorite things to eat! I really have to try it with the agave mustard though— such a unique idea!

I’ve been feeling a little sluggish lately with all of the cookies and chaos of the holidays so before work I went to the cafeteria and just bought some raw veggies to dip in peanut butter.
I made a banana and egg scrabble with peanut butter. So yummy.

I had some yummy fondue veggies at my New Years dinner at the Melting Pot.
I did eat healthy today… and only one glass of wine! For breakfast I had oatmeal and almond milk, for lunch a chop salad and cup of tomato soup with a roll, and same thing for dinner as I had for lunch. I always have dessert and today was no exception…. warm applesauce and berries topped with FF whip and a little cinnamon.
