Dinner
Dinner tonight hit the spot.
Chicken fingers + Sweet potato wedges + broccoli
Truth be told, this dinner was born out of a craving for ketchup! I really don’t like ketchup by itself (bleh!) but looove it on burgers and hot dogs. It’s also perhaps my favorite condiment for chicken finger dippin’!
These chicken fingers were healthier than most, as I baked them rather than frying them in oil.

- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
- Yield: 8 chicken fingers 1x

Description
These chicken fingers are healthier than most, as I baked them rather than frying them in oil.
Ingredients
- 8 chicken tenders
- 2 eggs, beaten
- 2/3 cup breadcrumbs
- 1 teaspoon paprika
- 1 teaspoon salt
Instructions
- Preheat oven to 400 degrees.
- Combine breadcrumbs, paprika and salt in a shallow dish. Pour eggs into another shallow dish.
- Dredge chicken tenders in eggs and then immediately roll in breadcrumbs.
- Place chicken fingers on a baking sheet sprayed with cooking spray and bake for approximately 15 minutes or until chicken is completely cooked in the middle.
- Serve with ketchup, honey mustard or your favorite dipping sauce.

Ryan and I both said these were great, but I think my favorite chicken fingers are the ones I make with Italian breadcrumbs. Mmm!
After dinner, Ryan and I took Sadie on an hour-long walk. It’s absolutely beautiful outside right now!
When we arrived home, I dug into one of these little babies…

Lauren, I was reticent for exactly the same reason. I was wholly unimpressed with the Twilight series (both the books and the movies – YUCK! And was only mildly interested in Harry Potter – I thought it was just a Lord of the Rings for kids )… but you really should read the books.
While there is obviously a ton of hype (which usually makes me wary and less interested) , it is pretty well justified in this case. The series very well written, and the heroine is portrayed as both very capable and intelligent — instead of just generally useless — and the plot is highly intriguing.
This is one instance where I say, don’t pass judgment on the hype before you give it a chance. It is really worth it. May the odds be ever in your favor! 😉

i chopped the potato into wedges, tossed it in a bit of olive oil and salt and baked it at 400 degrees for about 25 minutes. 🙂 easy and delicious!

I do something similar with chicken fingers, except I heat up a pan with a little olive oil, put the chicken in there to brown on both sides a little, and then finish them up in the oven. So yummy!! And I love dipping them in ketchup, too. Or BBQ sace, or honey mustard …. 😉

I make baked chicken nuggets for my daughter (and my husband and me too). They are so much better than any fried ones! That is actually a meal I somehow forgot about (happens to me alot, which is one reason I started a blog to keep track!). They will be on the menu for this weekend, thanks!

The movie was AWESOME! I cried 4 separate times during the first 30 minutes. As much as I love Harry Potter, I really wish they had stayed as true to the book as this movie did. (things were left out obviously, but at least the things they added in weren’t as egregious!)

Hunger Games did not disappoint! I was jealous of everyone going at midnight too then at last second my boyfriend won tickets (an hour before the show). It was awesome!

I must disagree with many of the previous comments about the movie. I did not like it, did not like the changes they made (omissions and additions), and was disappointed so much that I vowed at the end never to see another movie that was adapted from a book.
The cinematography was fabulous but the screenplay was seriously lacking. The movie failed to capture the pervasive desperation in the districts, Katniss’s distrust of everyone around her, the government’s cruelty and inhumanity, and provided so little character development that you did not really care about their survival.
So, the costumes, set, and locations were awesome–a lot of it closely matched what I had envisioned when reading the books, but the gem of the book–Katniss’s internal dialogue and revelations–failed to translate onto the big screen.

saw it last night at midnight! it’s only one of 3 movies that i’ve ever had a desire to go see at a midnight showing. it was excellent! very true to the book and of course it is so much better than twilight because suzanne collins is a talented writer, unlike stephanie meyer (IMO). everything in the movie matched what i envisioned in my brain as i read the books. what i couldn’t get over is how many parents had young children (age 8-10) there. teenagers/children are killing each other in this movie. while it’s not exceptionally graphic compared to other movies, it’s disturbing. the kids are fighting in an organized death match.
