Walking sleepily into the kitchen this morning, the only thing I had on my mind was pancakes for breakfast.
I got to work matching a batch of banana protein pancakes and in no time at all, our house was filled with the smell of banana bread and syrup.

Description
Sunday mornings are perfect for pancakes.
Ingredients
- 1 cup old fashioned oats
- 1 small banana, mashed
- 1/2 cup cottage cheese
- 2 egg whites
- 1/2 teaspoon cinnamon
Instructions
- Spray pan with cooking spray and heat to a medium heat
- Combine all ingredients in a small bowl and blend with an immersion blender (or blend in a food processor) until batter is thick, relatively smooth and all ingredients are fully mixed
- Pour batter onto the warm pan to form six medium-sized pancakes
- Allow to cook until edges start to harden, about three minutes
- Flip pancakes and allow to cook for approximately two more minutes
- Top with syrup and enjoy

yes! that should work! if the batter is too runny, just add more oats.

Yum! I had pancakes too… but mine were frozen from whole foods! Sweet potato pancakes, very good! You should try them!

can’t taste it at all! if you blend it enough you can’t even notice an odd texture. they aren’t “fluffy” like regular pancakes, but are rather dense because of the oats.

Protein pancakes topped with 2 sunny side up eggs was breakfast for me and Keith this morning! Pancakes are always a weekend staple for us!

Quick question: what kind of syrup do you use? I’ve always eaten mine dry because I know most syrups are jam-packed with sugar and calories. Any low-cal, healthier recommendations?
they actually make sugar-free syrups if you aren’t averse to artificial sweeteners. 🙂 i typically use light syrup and am not really picky with the brand since i use it so infrequently.

Just wanted to let you know I saw these and knew I wanted to try them out! I made them for my whole family including two tween-aged very picky eaters, and everyone gobbled them right up and asked for more!
