Ryan, Sadie and I spent the remainder of our morning on a 3.5 mile hike on our favorite bear, alligator and snake-laden trails.
The wildlife we saw on today’s walk was limited to squirrels and lizards. Vicious beasts!
Lunch
On our way home from the trails, we ran a few errands and grabbed the necessary ingredients for homemade pizza. I think Ryan was a little jealous of my delicious looking veggie pizza from last night and he was craving pizza this afternoon.
When we arrived home, we prepared a pizza topped with spinach, pizza sauce, mozzarella, Italian chicken sausage and avocado.
We didn’t add the avocado until the pizza came out of the oven because we were unsure how it would hold up in 475-degree heat.
I ate three slices of the pizza along with a sliced apple.
Even after eating pizza two times in less than 24 hours, I feel like I could easily eat it again for dinner tonight.
You can never have enough of the good stuff!

My favorite healthy snack right now is carrot chips. It’s just raw carrots crinkle cut to look like potato chips. Add some salt or some salsa, and color me fooled!! It’s amazing how the appearance of something can trick your brain! 🙂

I recently made my own peanut butter protein bites (pb, oat bran, protein powder, raisins) and they were delicious! Even my boyfriend used them as pre-workout fuel!

I made pizza with avocado for dinner last night! I thought I was so creative and couldn’t stop “tooting my own horn” while eating it last night because I thought it was fairly original…. definitely got a reality check after reading this post. 🙂
Favorite healthy snack…. plain FAGE greek yogurt and chopped fresh fruit. Eat some combination of it almost everyday when my students are eating their morning snack.
I am currently obsessed with homemade cinnamon applesauce layered over low fat cottage cheese…Yum!
