Ryan, Sadie and I spent the remainder of our morning on a 3.5 mile hike on our favorite bear, alligator and snake-laden trails.
The wildlife we saw on today’s walk was limited to squirrels and lizards. Vicious beasts!
Lunch
On our way home from the trails, we ran a few errands and grabbed the necessary ingredients for homemade pizza. I think Ryan was a little jealous of my delicious looking veggie pizza from last night and he was craving pizza this afternoon.
When we arrived home, we prepared a pizza topped with spinach, pizza sauce, mozzarella, Italian chicken sausage and avocado.
We didn’t add the avocado until the pizza came out of the oven because we were unsure how it would hold up in 475-degree heat.
I ate three slices of the pizza along with a sliced apple.
Even after eating pizza two times in less than 24 hours, I feel like I could easily eat it again for dinner tonight.
You can never have enough of the good stuff!

Lately I’ve been snacking on a wasa cracker topped with smushed avocado and tomato slices. The perfect combo of whole grains, protein and produce gives me energy for hours.
Hardboiled eggs! I always keep a pot of them in the fridge 🙂
My new favorite snack is a Van’s waffle topped with Justin’s Maple Almond Butter -so yummy! Sometimes I will jazz it up with some sliced banana on top or strawberries.

My fave healthy snack is an avocado mushed with chopped grape tomatoes, sea salt and a little bit of hot sauce — I don’t even bother with toast or crackers, just eat it straight with a spoon!

Hands down greek yogurt. I go through it way too fast, my favorite brand is trader joe’s 0% plain. I just dump anything that’s in my pantry into a bowl with some yogurt and am very happy.
