Kitty chow Tuna salad for lunch! Hide your noses!
Today’s lunch included a tuna salad wrap that I made my combining the following:
- 1 can chunk light tuna (packed in water)
- 1 tbsp. light Miracle Whip
- 1 tbsp. yellow mustard
- 1 medium carrot stick, chopped
- 1 celery stalk, chopped
Roasted cauliflower, carrot sticks and a a cup of Greek yogurt with honey served as my sides.
Stay tuned for a video post including a tutorial on how I like to roast my veggies like the above cauliflower! True I haven’t made it yet, but I hope to coerce Ryan into being my cameraman after work one day this week.

I think you should be able to eat whatever you want for lunch at work. I DESPISE the smell of cheese (can’t even walk down a cheese aisle without gagging), but if I asked everyone not to bring that to work they’d probably fire me! Can’t wait to see the video!

I remember when I was younger and anytime someone brought tuna for lunch, they were forced to sit FAR away from everyone else. Hahaha! Oh those were the days. 😉

So funny, every time I go to the grocery store I make it a point to try something “new”, and I picked up a Rutabaga having no idea how to cook it. I usually take the item home, research it and give it a try – what a coincedence I came to your blog today to see you have a Rutabaga Fries tutorial (esp because I learned that they cook it like a Potato in countries like Sweden! – so I had planned on making fries out of it!!). Score!
