Today I made a commitment to incorporate more leafy greens and fresh produce into my meals.
Exhibit A: My lunchtime salad.
The base of the salad was broccoli slaw and fresh spinach. I added chopped celery, steamed broccoli florets, chickpeas, sliced plum tomato and MorningStar Farms chik’n strips to the mix for additional flavor and variety.
I used balsamic vinegar as my dressing and placed the lid back on the Tupperware before shakin’ it up to evenly distribute the veggies and dressing.
The salad was tasty and filling! The chickpeas were my favorite. I am off to make a hot cup of tea now because I am freezing and cold salads don’t exactly warm ya up.

Yum, I like chickpeas as hummus or in salads!

I definitely love chickpeas in a salad. I also like hummus. Or roasted chickpeas are delicious to snack on!

That salad looks delicious!! Hands down my fave way to eat chickpeas is in hummus!! I really need to try roasted chickpeas too.

mmm loosk delicious!!! I love chickpeas in salads, they also great mashed up into a delicious dip, I believe it is called hummus LOL 🙂

I had some chickpeas that I sauteed with some broccoli and coconut oil, s&p and put it on top of a baked sweet potato with laughing cow cheese. It was surprisingly delicious.
I also like to roast chickpeas to make a crunchy snack.
