One thing we love about Leslie and Ross is their love for cooking. We all seem to enjoy being in the kitchen together, but I’d be lying if I said I don’t love it when Ross says he’s taking over breakfast because I know we’re in for a delicious morning meal!
Since Leslie and Ross have enjoyed a few of the Blue Apron meals we’ve gifted them with over the years, I figured I’d order a four-person delivery from Blue Apron to enjoy while they stayed with us. This meant I didn’t have to worry about meal planning or grocery shopping for a large dinner during their visit which was a huge plus for me since I have a little dude who demands a lot of attention from me these days. And then we had a built in fun double date activity ready for their arrival on Sunday night! Win, win.
Our Blue Apron delivery included two meals: Chicken Tetrazzini with Mushrooms, Broccoli and Parmesan Breadcrumbs and Seared Cod and Pickled Grapes with Butternut Squash and Farro Salad.
Like all Blue Apron deliveries, our refrigerated box arrived stocked with farm-fresh ingredients and chef-designed recipe cards. (And just FYI, they now have a recycling plan for their packaging! Woop! You can recycle at home or use their recycling program for free and send the packaging back to them with a free return label.)
We ordered the Family Plan since we were planning to feed four people, but there is also a two-person plan available, which is what Ryan and I typically order for the two of us since we first started ordering Blue Apron meals two years ago.
We made our first meal with Leslie and Ross on Sunday night and prepared the chicken tetrazzini after a relaxing evening on the boat. It was so nice not to have to worry about dinner plans and know we had a fresh and easy dinner ready for us to prepare when we arrived back home.
The pictures and detailed instructions on Blue Apron’s recipe cards make their recipes easy to follow and we had a delicious dinner ready for us in 40 minutes.
The parmesan breadcrumbs on the top of the chicken tetrazzini were unreal. They somehow tasted buttery without any butter and were so, so good!
We ended up bringing our second meal along with us to Banner Elk to share with my parents since they’re Blue Apron fans as well! I got my mom hooked on the service after I raved about it so much and knew she and my dad would likely love the second meal in our family plan as well.
We were actually able to beef up the four-person recipe enough to serve to six adults on our vacation by adding two additional fish fillets, a handful of grapes and more farro to the recipe which was awesome.
This recipe was a serious winner! Healthy, vibrant, filling and incredibly tasty!
We all ended up using some of the juice from the pickled grapes on top of everything which added a burst of tangy flavor to the cod. Yum!
