For more than two years now, Ryan and I have been regular customers of Blue Apron, a meal delivery service that ships all the farm-fresh ingredients you need to make chef-designed recipes right to your doorstep. After discovering Blue Apron during a trip to visit one of my best friends in New York City, I came home raving about it, which inspired Ryan to give me a month of Blue Apron meals for Christmas one year. Ever since then, we’ve been hooked and I’m looking forward to partnering with the service again in 2016 to share some tasty giveaways and recipe highlights with you guys again!

Our most recent shipment included everything we needed to make a fresh salmon dish, a healthy one-skillet cacciatore-style recipe and a buffalo chicken sandwich that left both of us wowed!
Before our meals were shipped, I checked the Blue Apron website and swapped some recipes in and out to customize the meals we wanted to try. Ryan and I almost always include at least one vegetarian dish in our orders (we’ll often do all vegetarian and tend to love these dishes most) but this time I opted to include both a fish and poultry recipe in our box. (We ordered the two-person plan but there are family plans available.)
The recipe I was actually least excited to try – the Buffalo Chicken Sandwich – was actually my favorite of the bunch and easily rivaled the best buffalo chicken sandwiches I’ve had at any restaurant.
As always, I followed the picture tutorial recipe cards that come with every Blue Apron shipment and had no trouble following all of the steps.
The recipe cards also often give tips and tricks to make meal preparation easier and I’ve picked up a ton of great “cooking hacks” along the way. (Example: Peel fresh ginger with a spoon. It works so well and you don’t waste nearly as much ginger as you do when you try to peel it with a knife.)

Ryan and I have used Blue Apron boxes to create a fun “at home date night” experience and now that we have a baby and our desire to go out for dinner is at an all-time low, these meals have truly helped us feel like we’re enjoying something special together from the comfort of our own kitchen.
We used the Seared Salmon and Salsa Verde recipe for a weeknight date night of sorts and prepared it together after Chase went to sleep.
It was fantastic and the salsa verde was easily the best part of the dish. I’ve already remade the salsa verde (a combination of mashed garlic, almonds, capers and parsley) a handful of times and used it on everything from baked chicken to tuna.
Unfortunately the photos from the Cacciatore Style Baked Eggs recipe didn’t turn out so well but it was definitely one of the healthiest (and easiest!) recipes we’ve received from Blue Apron to date!
It was packed with vegetables and the parmesan garlic toasts we served on the side were incredible. (I actually added an extra egg to our recipe because Ryan and I both love dippy eggs!)

I found a recipe similar to the salsa verde above that you might like — coat salmon with minced garlic, capers, dill, parsley, lemon juice, s&p chopped up fine and bake on 400 for 10 min…I had cod on hand and it was delicious but it would be good with almost any protein!

The Brie and Pear grilled cheese is similar to a dish I love at a restaurant here in Chicago, but would never really but brie, or pear for that matter (I’m an apple/banana girl) to make at home! Ahh! I’ve been wanting to try out blue apron for months for several reasons! 1. To step outside out of my cooking comfort zone and try more exotic cuisines (and be brave enough to cook fish on my own!) 2-no more waste! I can’t tell you how much food goes bad in my fridge when I buy ingredients for recipes. When they call for a little bit of an ingredient but you’ve got to buy a bunch is the worst! and last but not least – I have been so busy lately that it would be amazing to come home from work/errands to a box of food ready to be made in ~30 minutes.
