What if I told you that you can enjoy all the flavor of banana bread in perfectly portable mini bites?
And what if I told you that these bites are made without and butter, oil or added sugar. (Well, there’s sugar in the butterscotch morsels, but not in the dough, so I think that counts for something, right?) The bites are also eggless and yet somehow, they’re still completely delicious!
These bites taste great warm right out of the oven for a healthy dessert but can easily be stored in tupperware for a portable snack.

Description
When I picture banana bread in my mind, I envision a fragrant loaf of bread just begging to be sliced and topped with a smear of butter.
What if I told you that you can enjoy all the flavor of banana bread in perfectly portable mini bites?
Ingredients
- 2 very ripe bananas, mashed
- 1 cup oats
- 1/4 cup butterscotch chips
- 1/3 cup finely crushed walnuts
- 1/3 cup shredded coconut
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients together and thoroughly stir until everything is combined.
- Shape dough into small balls and place on a cookie sheet lined with parchment paper. The dough will be very moist and sticky, but it should hold its shape when formed into balls.
- Cook 15 – 18 minutes.
- Allow bites to cool and enjoy!
I hope these bites satisfy your banana bread craving and make your house smell like heaven!
Do you think these would hold up ok if I omitted the coconut?
I think so!
These sounds seriously amaaaazing!! I think I might try them with almonds, though, because I am not much of a walnut person.
Oh I LOVE butterscotch!!! These look fab.
Can’t wait to make these! Thank you!
These look amazing! I love that they’re so easy to make, I’m all about easy recipes haha
OMG – these sound heavenly and right up my alley – I love allll those ingredients, ESPECIALLY BUTTERSCOTCH!!!!!!!!!!!!!! YUM!
totally making these tonight!
yummy! I swear you must be raiding my kitchen, because just like yesterday’s recipe, I happen to have a thing of butterscotch morsels that I have no idea what to do with 🙂 These sound delicious but I’m not a fan of walnuts…wonder if there is a good substitution?
I make these with chocolate chips instead of butterscotch and my kids LOVE them. They are always gone within an hour. Yes, ALL of them!
these sound sooo heavenly!!! Can you please send some my way! I’m smelling a giveaway 🙂
These sound delicious!
Holy yum. I probably shouldn’t make these since butterscotch is my nemesis. I’d probably eat them in one sitting :/ #fatkidatheart
Oh my goodness, these look like the perfect autumn snack!! They kind of look like the changing leaves 🙂
I love making portable oatmeal bites! I have never added butterscotch chips, to me they just taste way too artificial, but nonetheless, I enjoy them plain!
Butterscotch and oatmeal are great together! My favorite cookies are cowboy oatmeal cookies, an oatmeal and butterscotch cookie. This looks like a great, healthier version of that.
Yummm! They’re so simple yet look so deeeeelish. I would definitely sub the butterscotch chips for pb chips though 😉
Ummm… hello AMAZING! (minus the coconut but we all know how I feel about that) YUMMMMMMMMM! Making this weekend!
Um yum!! Also, the photos are so pretty! Great job!
Totally love this idea! I want to recreate them, but maybe with chocolate. 🙂 Thanks for sharing!
Amazing!!! Funny timing, I was going to make banana bread for a family bbq this weekend, now I may have to make these!
making these ASAP – they will be perfect for breakfast on the go!!

YUM! I dont really like butterscotch but I am doing to try these with dark chocolate chunks!
Thanks for posting Julie! Being gluten and dairy- free is annoying for someone with a sweet tooth, so I really appreciate this !! 🙂 Have a great day !!
Oh wow!! These look delicious and really simple to throw together! I can’t wait to make this!
MMM. 🙂 how many does this recipe make?
I just made these tonight– AMAZING JULIE!! So good.
These sound great!!! Yummy!!! 🙂
These look great and I love it that they are portable! I think i’ll try them with some mini chocolate chips. thanks for the recipe.
What about without the walnuts? Think it’d be okay still?
I just made them, they are delicious!! Thank you for sharing 🙂
I recently tried this recipe and absolutely loved it! Great job on this! Very, very satisfying!!! I used frozen bananas that I had stashed for baking/dessert ideas, and they worked perfectly. I also used almonds instead of walnuts, since I always have a lot on hand. Again, worked great! I think chocolate chips or peanut butter chips would also work well. I will definitely make this again! Thank you so much!
one more item of note. Don’t forget the parchment paper! Butterscotch can burn and get sticky! 😀 😀 😀 Enjoy!!!
I used Reeses Peanut Butter chips because my store was out of butterscotch, and they were super delish!
I made these last night and they are AMAZING!!! So good that I just had to come back and tell you! I actually changed them up just a little by adding a tablespoon of wheat germ and about 3 tbsps of honey. I also left my walnuts in pretty large pieces because I didn’t feel like cleaning the blender or food processor! 🙂 lazzzyyyyyy!
THANK YOU! THESE ARE SO GOOD!
