And what if I told you that these bites are made without and butter, oil or added sugar. (Well, there’s sugar in the butterscotch morsels, but not in the dough, so I think that counts for something, right?) The bites are also eggless and yet somehow, they’re still completely delicious!
These bites taste great warm right out of the oven for a healthy dessert but can easily be stored in tupperware for a portable snack.
Butterscotch Banana Bread Oatmeal Bites

Description
When I picture banana bread in my mind, I envision a fragrant loaf of bread just begging to be sliced and topped with a smear of butter.
What if I told you that you can enjoy all the flavor of banana bread in perfectly portable mini bites?
Ingredients
- 2 very ripe bananas, mashed
- 1 cup oats
- 1/4 cup butterscotch chips
- 1/3 cup finely crushed walnuts
- 1/3 cup shredded coconut
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients together and thoroughly stir until everything is combined.
- Shape dough into small balls and place on a cookie sheet lined with parchment paper. The dough will be very moist and sticky, but it should hold its shape when formed into balls.
- Cook 15 – 18 minutes.
- Allow bites to cool and enjoy!

Butterscotch and oatmeal are great together! My favorite cookies are cowboy oatmeal cookies, an oatmeal and butterscotch cookie. This looks like a great, healthier version of that.

I recently tried this recipe and absolutely loved it! Great job on this! Very, very satisfying!!! I used frozen bananas that I had stashed for baking/dessert ideas, and they worked perfectly. I also used almonds instead of walnuts, since I always have a lot on hand. Again, worked great! I think chocolate chips or peanut butter chips would also work well. I will definitely make this again! I made these last night and they are AMAZING!!! So good that I just had to come back and tell you! I actually changed them up just a little by adding a tablespoon of wheat germ and about 3 tbsps of honey. I also left my walnuts in pretty large pieces because I didn’t feel like cleaning the blender or food processor! 🙂 lazzzyyyyyy!

Made these but added 1 tsp vanilla and 1/3 cup each chia seeds and ground flax seeds for some added nutrition. They are PERFECT pre-workout/run fuel! Not to mention how supremely addictive they are. Thank you for sharing such a great recipe!!
